HONEY-ROASTED SALTED FIGS
Dried figs with a salty-sweet coating and clusters of red grapes are a refreshing dessert. Although tiny, each item is abundant in flavor.

Steps:
- Preheat the oven to 400 degrees. Lightly brush a rimmed baking sheet with olive oil. Whisk 1/4 cup extra-virgin olive oil and 1/4 cup honey in a large bowl. Add 10 ounces each of dried Turkish and Black Mission figs; toss to coat.
- Arrange figs in a single layer on prepared sheet. Sprinkle with 1/2 teaspoon coarse salt. Roast until fragrant and caramelized, 12 to 15 minutes. Immediately loosen figs from sheet with a metal spatula. Let figs cool slightly, loosening again after 5 minutes. Transfer to a platter, and serve with assorted grapes.
ROASTED FIGS WITH FRESH RICOTTA
Steps:
- Preheat the oven to 400 degrees F.
- Put the figs, cut side up, in a baking dish. Melt the butter in a small saucepan over low heat, and whisk in the honey, cinnamon and salt. Drizzle the hot honey butter over the figs and roast in oven until very soft, 10 to 15 minutes.
- Divide the fresh ricotta or fat free yogurt among 4 serving dishes and top with the warm figs and sauce. Enjoy!
- Cook's Note: These hot figs are really great over mixed greens or even on a toasted baguette as a crostini!
DELISH BLACK MISSION FIGS!
When I lived in California, I couldn't wait until the farmer's markets had figs...big, juicy, amazing to eat! They are hard to find in Colorado, and are less flavorful than the ones in CA. So I came up with this little appetizer to showcase some of my favorite ingredients.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange fig halves, cut sides up, on a baking sheet. Top each fig half with goat cheese; lay prosciutto strips atop goat cheese layer.
- Broil figs in the preheated oven until prosciutto is crisp and goat cheese is melted, 3 to 5 minutes.
- Transfer the warm figs to a serving platter and drizzle with honey.

- For the Sauce: Prepare the sauce (YUM!). In a small pan add remaining ingredients. Bring to a boil, reduce heat, and cook at a low simmer for ~ 8-10 minutes or until thickened. Don't skimp on this step - you want it to reduce and become gooey.
- For the Whipped Cream: Put medium metal mixing bowl in freezer (helps cream whisk easier/faster) for 15 minutes before whipping. Whip cream in metal bowl with an electric hand mixer until stiff peaks form (~6-8 minutes). Don’t overbeat the cream or it will become lumpy. You can fold in a little sugar, bourbon, or vanilla extract for flavor, but the sauce has enough sweetness. I leave it plain for this recipe.

- Preheat the broiler (on low, if you have a choice), with the top rack about six inches below the heat source.
- Cut each fig in half from stem end to base. You'll be broiling the figs cut-side up, so if your figs aren't symmetrical, try to make the cut such that you'll have as stable a base as possible on the uncut side. Arrange the fig halves cut side up on a baking sheet.
- Slice open the vanilla bean with a paring knife and scrape out the seeds with the tip of the knife. Spread a bit of seeds on the cut side of each fig half. You don't need a lot to get a great vanilla flavor.
