- In 12-inch skillet, melt butter over medium-low heat. Stir in brown sugar. Add onions; cook 12 to 16 minutes, stirring occasionally, until onions begin to turn golden brown. Place onions in medium bowl; cover to keep warm.
- In same skillet, cook beef patties over medium heat 6 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
- Return onions to skillet; pour gravy over onions and patties. Cook 2 to 3 minutes longer, stirring once or twice, until gravy is thoroughly heated. If desired, sprinkle with chopped fresh parsley.

- 1) Heat oven to 350 degrees F. Place a wire cooling rack on a baking sheet and coat with nonstick cooking spray. 2) Place bread crumbs (panko) and buttermilk in a small bowl. Let sit for 10 minutes. Add eggs, garlic salt, 1 teaspoon Italian seasoning and 1/4 teaspoon pepper. Mix well. 3) Place ground beef in a large bowl. Add egg mixture and mix to combine. Form into 40 meatballs, about 1 level tablespoon each. Place on prepared rack over baking sheet. Bake meatballs for 20 minutes. 4) Meanwhile, heat olive oil in a large nonstick skillet over medium-high heat. Add onions, cover pan, and cook, shaking pan occasionally, until onions have wilted, about 10 minutes. Remove cover and cook until onions area deep golden brown, about 20 minutes longer. Sprinkle flour over mixture, stir and cook for 1 minute. Gradually add about 2 cups of condensed beef broth, stirring until flour is completely incorporated into liquid. Bring contents of pan to a simmer. Stir in the remaining 1/2 teaspoon Italian seasoning, 1/4 teaspoon pepper and the nutmeg. Add salt to taste. Return meatballs to skillet, lower heat to medium-low, and simmer, stirring occasionally, for about 10 minutes, or until meatballs are heated through. Serve with mashed potatoes or buttered noodles. - Add beef, breadcrumbs, egg, mustard, ketchup and worcestershire sauce to a large bowl. Combine with your hands or a large spoon.
- Heat oil in a large skillet. Working in batches add meatballs and brown on both sides, 2 minutes per side. (They will finish cooking in the sauce). Remove the meatballs and set aside.
- Add onions to the same skillet and cook over medium heat until light brown and caramelized 5-10 minutes. (You can add more oil or a splash of water if the onions are getting too brown)

- MIX: In a medium bowl, combine the grated onions, panko breadcrumbs, 3/4 teaspoon kosher salt, and all the remaining ingredients except the ground beef and oil. Allow the mixture to stand for 5 minutes so that the excess liquid from the onions gets soaked up by the breadcrumbs. Then, add the meat and mix until *just* combined. Divide the meat mixture into 18-22 meatballs that are 1 1/2 tablespoons each.
- COOK: Add the tablespoon of oil to a large skillet and let it heat through on medium-high heat. When hot, add the meatballs in a single layer, do this in batches if the pan is not large enough. Cook the meatballs for 6-9 minutes, flipping halfway through until all sides brown evenly, don’t worry if they aren’t cooked all the way through. Remove to a plate. Add additional oil and cook any remaining meatballs the same way.
- GRAVY: Add 1 tablespoon of butter to the skillet and allow it to melt. When melted, add the mushrooms and allow them to cook and brown, about 3-4 minutes. When brown, add the onions and saute for 3 minutes before adding in the garlic. Let the garlic cook for 30 seconds or until fragrant. Then add the remaining butter to the skillet and allow it to melt. When melted, add the flour and stir to combine. Allow the flour to cook for 1 minute, stirring constantly. Gradually pour in the beef stock with one hand while you stir with the other hand. Then, stir in the Worcestershire sauce, mustard, and soy sauce. Allow the sauce to cook and simmer, once simmering, let cook for 3 minutes or until it thickens just a bit. Then add the meatballs to the skillet (with any released juices that may have collected on the plate) and let cook for 4 minutes. If the gravy thickens too much, you can add a splash of water to thin it to your liking. Taste and adjust seasonings as desired. Serve meatballs and gra
