MASHED RUTABAGA AND YUKON GOLD POTATOES

Mashed Rutabaga and Yukon Gold Potatoes image

Steps:

  • Toss the rutabagas into a large pot and cover generously with water. Season the water generously with salt.
  • Bring the water to a boil, reduce to a simmer and simmer for 45 minutes. Toss in the potatoes and simmer until the potatoes are fork tender, another 20 minutes.
  • Strain the rutabagas and potatoes from the water and pass through a food mill into a large bowl.
  • In a small saucepot, bring the cream to a boil and turn off.
  • Take 1 to 2 pats of butter and a splash of hot cream and whip them into the potato mixture. Continue this until all the butter and cream are incorporated. Taste and re-season with salt if needed. Serve immediately or keep warm in a low oven.

1 large rutabaga, waxy skin removed and cut into 1-inch chunks
Kosher salt
4 large Yukon gold potatoes, cut into 1-inch chunks
3/4 cup heavy cream
1 stick cold butter, cut into 5 to 6 pats

Scandinavian Rotmos (Side Dish With Rutabagas and Potatoes) image

Steps:

  • In a large pot, bring water, allspice, peppercorns, and salt to a boil.
  • Peel and finely chop the rutabagas and carrots. Add to the pot.
  • Reduce temp to a low boil and cook for 15 minutes.
  • Meanwhile, peel and finely chop the potatoes.
  • After the 15 minutes is up, add the potatoes and cook an additional 20 minutes, or until the potatoes are fork-tender.
  • Use a slotted spoon to remove the potatoes to a mixing bowl. Mash the potatoes rutabagas, and carrots, adding just enough cooking water to get a creamy purée.
  • Place in a serving bowl, sprinkle with cinnamon or nutmeg, and top with butter.

RUTABAGA-POTATO MASH WITH BACON

For the food historian Jessica B. Harris, humble rutabagas laced with rich, smoky bacon fat were the highlight of every childhood Thanksgiving. The ones her mother cooked were sharper than the ones we buy today, so she cut them with mild potatoes, but you can adjust the proportions to your liking. If bacon is off the menu for you, add butter or olive oil to the pot instead, and more to taste after mashing.

Rutabaga-Potato Mash With Bacon image

Steps:

  • In a large, heavy pot over medium heat, cook bacon until fat is rendered, and bacon is beginning to brown. Add rutabagas and pour in water to cover. Bring to a boil, then lower to a fast simmer and cook 25 minutes.
  • Add potatoes to the pot and cook until both vegetables are very tender, about 20 minutes more. Drain, reserving about 2 cups of cooking liquid. Set bacon aside.
  • Mash the vegetables together until smooth or, for a finer texture, put through a food mill. Add reserved liquid as needed to loosen the mixture. Finely mince bacon and add to the vegetables. Add sugar, salt and pepper and stir well. Taste and adjust the seasonings. Transfer to a serving bowl and serve hot.

Steps:

  • Put the potatoes in a large pot and cover them with water. Add 1 teaspoon salt for each quart of water. Heat to boiling and cook for 20 to 25 minutes, until the potatoes are tender. Drain, peel, and mash the cooked potatoes.
  • Meanwhile, pare the rutabaga and cut it into 1-inch pieces. Place in a saucepan, cover with water, and bring to a boil. Simmer until tender, 25 to 30 minutes. Drain, mash, and add the cooked rutabaga to the potatoes. Beat with an electric mixer until the potatoes and rutabagas are smooth and fluffy. Beat in the flour, eggs, salt, and milk or cream.
  • Preheat oven to 350°F Butter a 3-quart shallow baking dish. Turn the mixture into the dish. Using a spoon, spread out the mixture, making indentations in the top of the casserole. Dot with the butter and sprinkle with the bread crumbs. Bake uncovered for 1 hour, or until lightly browned. 12 servings.

RUTABAGA POTATA

This recipe comes from my husband's Swedish side. It's called ROTMOS, kind of sounds like ROOT MOOSE. I just call it Rutabaga Potata! When Aunt Lenore made this years ago, I loved it right away. And of course, I asked her how to make it! It's just wonderful comfort food! Much like a big bowl of mashed potatoes.

Rutabaga Potata image

Steps:

  • Carefully peel and cut the rutabaga into small pieces. Place in a pot of cold water, with a lid.
  • The rutabaga takes 20 minutes longer than the potatoes to cook. So, start cooking the rutabaga while peeling the potatoes. Bring to a boil and reduce to a simmer.
  • Cut the potatoes into pieces, and place in a pot of cold water, add salt to the water too. Just like you were making mashed potatoes. Bring to a boil and reduce to a simmer. Cover with a lid.
  • Cook both rutabaga and potatoes until tender. When cooked and tender, drain both pots well. Add the contents of one pot to the other, add the butter, some milk and pepper, and mash together. Just like mashed potatoes. Place in a serving bowl, and dot with butter. Enjoy!

  • In a pot large enough to hold the rutabaga and potatoes, cook the rutabaga in enough water to cover both rutabaga and potatoes. Cover the pot. After 10 minutes, add the potatoes and continue cooking, covered, until both vegetables are done, about 10 to 15 minutes. Drain.
  • In food processor or with hand potato masher, puree potatoes and rutabaga with remaining ingredients.
