SMOKY BBQ PULLED PORK BAKED SPAGHETTI

Steps:
- Heat oven to 375ºF.
- Cook spaghetti as directed on package, omitting salt.
- Meanwhile, heat oil in large saucepan on medium heat. Add onions and peppers; cook 5 to 7 min. or until crisp-tender, stirring frequently. Add garlic; cook and stir 1 min.
- Drain spaghetti, reserving 1/2 cup cooking water. Add reserved water to cooked vegetables in saucepan along with the tomatoes and barbecue sauce; mix well. Stir in meat. Add spaghetti; mix lightly.
- Spoon spaghetti mixture into 13x9-inch pan sprayed with cooking spray; top with cheese.
- Bake 25 to 30 min. or until heated through.

- In a large skillet, heat olive oil over medium heat. Saute the pepper and onion until softened, 1 to 2 minutes. Stir in the garlic salt. Add the BBQ sauce and bring to a boil. Reduce the heat to a low simmer and add the chopped meat.
- Meanwhile, fill a large pot with water and bring to boil. Season liberally with salt and add spaghetti. Cook until al dente (firm but not hard), about 7 minutes, and drain. Toss spaghetti with sauce.
- In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes.

- Place pork shoulder in a large pot and add enough apple cider to cover. Combine white sugar, brown sugar, salt, paprika, onion powder, black pepper, and garlic powder in a bowl. Mix about 1/4 cup sugar rub into cider; reserve remaining rub.
- Cover pot and refrigerate for 12 hours.
- Prepare smoker to about 210 degrees F (99 degrees C). Add enough wood chips to smoker.
- Pour cider brine into the water pan of the smoker; add onion and about 1/4 cup more sugar rub. Spread remaining rub over pork shoulder. Transfer pork to the center of smoker.
- Smoke pork until very tender, about 8 hours. Monitor hickory chips and liquid, adding more wood and water, respectively, as needed. Transfer pork to a large platter and cool for 30 minutes before shredding with forks.

- Spray the inside of slow cooker with non-stick cooking spray (or use a slow cooker liner).
- Combine paprika, salt, pepper, garlic powder, mustard and liquid smoke in a small bowl.
- Rub all over the roast, covering all sides. (Optional: poke your roast with a large fork a couple of times to let the flavors really soak in).
- Place lid on slow cooker and bake on low for 8-10 hours (or high 5-6 hours).
- Shred meat when finished and add bottle of BBQ sauce.
- Serve on buns.
