MUSHROOM PORK CHOPS
Quick and easy, but very delicious. One of my family's favorites served over brown rice.

- Season pork chops with salt, pepper, and garlic salt to taste.
- In a large skillet, brown the chops over medium-high heat. Add the onion and mushrooms, and saute for one minute. Pour cream of mushroom soup over chops. Cover skillet, and reduce temperature to medium-low. Simmer 20 to 30 minutes, or until chops are cooked through.

PORK CHOPS SMOTHERED IN CREAM OF MUSHROOM
I was trying to figure out what way I could fix the pork chops and then I thought about using the mushroom soup and adding onions and mushroom pieces into the dish and then I just put them into the oven and let them bake a little bit and then I served them with mashed potatoes and whatever else I was wanting to add to the side dishes. This is a really easy recipe to follow and use.

Steps:
- Brown your pork chops in a skillet.
- Peel and slice the onion thinly.
- Preheat oven to 350°F.
- Place browned pork chops in a baking dish, layer with the sliced onions.
- Top with mushrooms.
- Mix cream of mushroom soup with the evaporated milk.
- Pour over the top of the pork chops and onions.
- Bake in the oven for about 45 minutes.
- Serve hot.
SLOW COOKED SMOTHERED PORK CHOPS
This smothered pork chop recipe maximizes the flavors of bacon and mushrooms, while benefiting from the tenderness only a slow cooker can deliver.

Steps:
- sprinkle adobo seasoning and garlic powder on each side of pork chops, and rub on both sides making sure to cover evenly. set aside pork chops.
- brown bacon in a large skillet.
- remove bacon and leave grease.
- add olive oil (if needed) to bacon grease and brown pork chops on both sides.
- place browned pork chops in slow cooker.
- in a separate bowl, combine cream of mushroom soup with chicken broth, water, and brown sugar. add in 1/2 of the cooked bacon and place the remaining bacon in the refrigerator for later use.
- pour mix over the browned pork chops, making sure to cover the meat completely.
- cook on high for 3 hours.
- saute sliced onions, garlic, and sliced mushrooms in olive oil, and add mixture to slow cooker 30 minutes before the end of cooking time. make sure to mix in well.
- serve with sweet potato casserole (or mashed potatoes), sprinkle left over bacon over the smothered pork chops, and ENJOY!

- Heat a heavy bottom pan like a cast iron or dutch oven with 1 tbsp of olive oil on medium-high heat. Rub olive oil on each side of the pork chop and season with salt and pepper. You can even add your favorite all purpose seasoning here, too. Sear the pork chops for 2-3 minutes on each side or until their internal temperature has reached 145F.
- Reduce the heat to medium (the pot will be very hot so you might want to remove it from the heat to let it cool for a minute), add the chicken bone broth, bacon, mushrooms, onion, garlic, onion powder, and garlic powder to the pot and cook for 3-4 minutes, stirring occasionally, until the mushrooms have softened, the onions are translucent, and the mixture is fragrant. The chicken bone broth should be mostly absorbed by the mushroom mixture.
- Add the coconut cream (shake it first!) and increase the heat to medium-high, stirring constantly for 3-4 minutes until bubbly but not at a rolling boil. Taste and add salt and pepper to your liking.

- Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
- Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
- Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
- Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
