SOUTHERN SUCCOTASH CAT'S STYLE

I love succotash but don't really like lima beans! So I tweaked the classic old fashioned way and came up with my own version. My husband really liked it this way and I must say it was a huge success! You may also add smoked ham or country ham to this dish if you desire ( the picture has smoked ham in it - it was my second time making it and I added the smoked ham - wonderful addition!) Family tested and family approved.

Southern Succotash Cat's Style image

Steps:

  • Place butter peas, thyme, onion half and garlic clove in a medium sauce pan and cover with water. Bring to a boil ; reduced heat to medium and simmer, stirring occasionally 20 minutes or until tender. Drain beans, reserving liquid; discard onion, garlic and thyme.
  • Saute diced onion in hot oil in large skillet over med-high heat until tender. Stir in corn and honey; cook stirring consistinately until corn is tender about 5 minutes. Stir in beans, chives and 1/2 reserved liquid. Cook approximately 5 minutes, stirring occasionally. Stir in butter and salt and pepper to taste.

1/2 small vadalia onion or other sweet onion
1 clove(s) garlic
2 tablespoon(s) olive oil
5-6 stalk(s) fresh corn, stripped from stalk
1 teaspoon(s) honey
2 tablespoon(s) unsalted butter
- kosher salt and freshly ground pepper
- fresh chopped chives to taste(scissors work great)
1 medium vadalia onion, diced

Steps:

  • In a Dutch oven or large saucepan, simmer ham hock in water until tender, 1-1/2 hours. Cool; remove meat from the bone and return to pan. (Discard bone and broth or save for another use.) Add the tomatoes, beans, peas, corn, green pepper, onion, ketchup and seasonings. Simmer, uncovered, for 45 minutes. Add okra; simmer, uncovered, until tender, 15 minutes. Discard bay leaf before serving. Garnish with dill and chives, if desired.

1 smoked ham hock (about 1-1/2 pounds)
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups frozen lima beans, thawed
1 package (10 ounces) crowder peas, thawed or 1 can (15-1/2 ounces) black-eyed peas, drained
1 package (10 ounces) frozen corn, thawed
1 medium green pepper, chopped
1 medium onion, chopped
1/3 cup ketchup
1-1/2 teaspoons salt
1-1/2 teaspoons dried basil
1 teaspoon rubbed sage
1 teaspoon paprika
1/2 teaspoon pepper
1 bay leaf
1 cup sliced fresh or frozen okra
Snipped fresh dill and chives, optional

Steps:

  • Place beans in large saucepan. Cover with water; add about 1 tsp salt. Bring to boiling. Skim surface till clear. Cook, partially covered, 30 to 40 minute till tender. Strain beans into sieve. Set aside.
  • Shuck corn: using clean kitchen towel, gently rub corn to remove silks. Using sharp knife, cut corn kernels from cobs.
  • In large skillet, heat butter over medium high heat till melted and foaming. Add corn. Lightly season with salt and pepper, stirring to coat corn in butter. Cook 1 to 2 minute Add beans. Lightly season with salt and pepper. Cook 1 minute more, taking care not to overcook the corn and beans.
  • Add cream (and ham). Cook just till heated through and slightly reduced. Season to taste.
  • Note: OK to use frozen veggies when fresh not in season.

  • Cook the Lima beans in salted water per the package directions. Drain and set aside. (Reserve 1 cup cooking liquid)
  • In a large skillet cook the bacon slices over medium-high until crisp. Remove to paper towels to drain then chop. Reserve 3 Tbsp drippings freeze the rest.
  • In the drippings, cook the onion and red pepper over medium-high for 2 minutes or until translucent and beginning to brown.
  • To the skillet, add the Lima beans, corn, cherry tomatoes, vinegar, tarragon, garlic salt, black pepper, and reserved cooking liquid. Simmer over medium heat for 5 minutes or until the corn is tender.
