This inexpensive one-dish meal is a family favorite. Moist and flavorful, it uses ingredients found right in your pantry. It can be doubled easily for OAMC.

Steps:
- Cook pasta 2 minutes under package directions. Drain.
- Meanwhile, in a large frying pan, melt butter. Sauté celery, onion and Spam until vegetables are just getting soft.
- Add soup, tomatoes and seasonings. Cook until well blended and heated through.
- Place pasta in a large casserole; add spam mixture and tomato sauce; tossing well to mix (can be frozen at this point).
- Cover tightly and cook in a 325° oven for 45 - 60 minutes.

BROKEN PASTA WITH MUSHROOM, ONION, AND CRISPY SPAM®
I love crispy SPAM®, caramelized onions, and button mushrooms. The idea of this recipe is to have them all in one dish! Sprinkle some more Parmesan cheese and black pepper on top to serve.

Steps:
- Break each piece of bucatini into 4 pieces.
- Toast luncheon meat with 1 tablespoon olive oil in a pan over medium heat. Add crushed peppercorns and cook until meat is crispy, about 5 minutes. Set aside.
- Heat remaining oil in another pan over medium-low heat. Cook onion, covered, until soft, 5 to 7 minutes. Add sugar; cook, stirring every 2 to 3 minutes, until onion is very soft and browned, 10 to 15 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook bucatini at a boil until tender yet firm to the bite, about 5 minutes. Drain.
- Add mushrooms, Parmesan cheese, Italian seasoning, garlic powder, red pepper flakes, salt, and black pepper to the pan with the onions. Stir and cover. Cook until mushrooms shrink and lose some moisture, about 5 minutes. Add butter; cook until flavors meld, about 3 minutes more. Add the crispy meat and Parmesan cheese. Stir.
- Drain pasta and stir into the mushroom mixture. Add mozzarella cheese. Increase heat to high and cover pan. Cook, stirring occasionally, until pasta develops a light crust, 3 to 5 minutes more.

I know this sounds bizarre, but it really is good! This is a recipe that came from a family with eleven kids. It used to be a budget stretcher for them, back in the days when Spam was cheap! This is also very quick and easy to prepare.

Steps:
- Cook spaghetti according to directions on box.
- Slice spam lengthwise into 1/2" x 1/2" wide strips.
- Add spam to spaghetti sauce in medium saucepan and bring to boil, turn heat down and simmer for about 10 minutes or until hot.
- Spoon over individual servings of spaghetti.
SPAM MACARONI AND CHEESE
This decadent yet simple recipe pairs creamy macaroni and cheese with crispy, salty-sweet diced Spam for a dish that bridges Puerto Rico and the South. It's much quicker than most homemade macaroni and cheese recipes (which often require making a roux and cream sauce), without sacrificing texture or flavor. It is also incredibly adaptable, because it will work with most cheeses. If you have the time and the will, sprinkle the finished macaroni with extra cheese and bake under a low broil for 5 to 10 minutes until toasted. During tough times, a box of instant mac and cheese and a can of Spam will also yield delicious results.

- Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
- Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
- Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
- Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
- Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
- Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
- Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.

- 2. Combine soup, milk, green pepper, onion and pepper.
- 3. Place over low heat.
- 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
- 5. Pour mixture into a 1 1/2 quart casserole dish.
- 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.
