GOLDEN SOUP
I found this soup on the internet on a vegan website. It's vegan, fat free and low in calories. I've modified it a bit. The original recipe included 1/3 cup small pasta and 1 tsp mellow miso. Nutritional yeast is pretty strong so novices should add 1/2 the amount and taste the soup first.

Steps:
- In a medium pot, combine the onion, carrot, celery, and saute the vegetables in 1-2 T water for 3 minutes to soften.
- Meanwhile, in a food processor or blender, place the butter beans and 1/2 cup of the remaining amount of water, and process until smooth and creamy.
- Add the pureed mixture, the remaining approximately 2 cups stock (or water), Swiss chard (or other greens- I used frozen spinach), corn, and turmeric.
- Stir well, bring the soup to a boil, reduce the heat to low, and simmer for 8-10 minutes or until the vegetables are tender.
- Add the nutritional yeast flakes (and miso if used) during the last two minutes of simmering time.
- Taste and season with salt and freshly ground pepper, as needed.

SPICED GOLDEN SOUP
The heat and Indian flavor of this soup are balanced beautifully. It's also very easy to make. I like to serve it with a loaf of freshly baked bread (as seen in photo!)

- Soften the onion, in a medium-large pot, in about a 1/4 cup water, till the water is just about gone.
- Meanwhile, heat oil over medium in a small pan. Add garlic and saute for just a minute or so, not quite till golden. Add remaining spices and stir to coat. Saute these for another couple of minutes, reducing heat if necessary. (You can use more oil if you wish. The spices will be sort of crumbly rather than pasty, but the flavor still develops just as well.).
- Add spices to onion, and stir to coat well-a silicon spatula works really well for this! Or a wooden or regular spoon probably would too.
- Add the 6 cups water, and cover to bring to a boil faster. When a boil has been achieved, add the split peas and let it continue to bubble for a minute.
- Reduce heat to very low, cover and let simmer for about 1 1/2 hours, stirring occasionally, till the split peas are soft and mostly lost their shape.
- Add lime juice, salt to taste, and serve. Slices of whole-wheat bread are wonderful for dipping. Or, if you use a little less water (say 1/2-1 cup less) this would be thick enough to serve like a dahl,over rice. Enjoy!

- Place canola oil or light flavored oil into pot. On a medium-high heat add your shallots, garlic, ginger and ground turmeric. Cook until lightly aromatic.
- Add your gluten free chicken bone broth or vegetable broth to the pan and salt and pepper to taste. Bring to a gentle boil. Add your vermicelli rice noodles. Do not overcook as they only take about two minutes and then they will be aldente. Your vermicelli rice noodles will absorb some the broth and expand so adjust the amount of broth to the amount of noodles added, depending on your package size. (If you decide to use a different type of noodles, you may have to increase the amount of broth and cooking time to time specified on the package)
- Add your bok choy, and any other items you like such as tofu or egg. (If you choose to add an egg you can do this 3 ways. You can add the beaten egg at the end so your broth is thick and rich. You can add it whole at the end and make like a poached egg or maybe you want to fry your egg separately and add on the top at the end.
