SPICY KOREAN COLESLAW

Cabbage is a popular and healthy food, particularly in Korean cooking. This spicy version of cole slaw can be used as a replacement for Kimchi in a pinch!

Steps:

  • 1. Mix all of the dressing ingredients together in a small bowl.
  • 2. Put cabbage, onions and scallion in large bowl. Pour dressing over the cabbage, onions, and scallions. Mix to combine.
  • 3. Can be refrigerated for a few hours before serving for flavors to combine.

1 bag(s) coleslaw mix (or 1 small head cabbage, finely sliced)
1 c thinly sliced red cabbage (if not using bag mix)
1 c onion, thinly sliced
5 scallions, chopped
1 carrot, julienned (optional, especially if not using bagged cabbage)
3 clove garlic, minced
2 Tbsp soy sauce
2 Tbsp vinegar
1 Tbsp sesame oil
2 Tbsp sugar
1 Tbsp sesame seeds
1-2 Tbsp crushed red pepper flakes or kochujang paste, to taste
salt and pepper, to taste

Kimchi (Korean Fermented Spicy Cabbage) image

Steps:

  • Remove discolored, bruised outer leaves of cabbage and rinse cabbage under cold water. Cut cabbage head into 2-inch pieces.
  • Divide 3 cups water among 3 bowls. Stir 1 cup sea salt into each bowl of water. Sprinkle the remaining 1 cup sea salt over cabbage.
  • Place salted cabbage in the 3 bowls salted water until partially submerged; let sit 6 to 12 hours.
  • Rinse cabbage thoroughly under cold water several times. Squeeze cabbage to remove excess water. Cabbage should have a rubbery texture. Transfer cabbage to a colander or basket to thoroughly drain the cabbage, at least 2 hours.
  • Combine 3 cups water and rice flour in a saucepan; bring to a boil. Whisk mixture until a glue-like consistency, 5 to 10 minutes. Remove saucepan from heat and cool rice mixture to room temperature.
  • Combine onion, garlic, ginger, and 1 tablespoon water in a food processor; pulse until smooth, adding more water if needed.
  • Pour chile flakes into a large bowl; stir in onion-garlic mixture, cooled rice flour mixture, fish sauce, shrimp, brown sugar, and sesame seeds until well mixed. Add radish and green onions and mix well.
  • Coat each cabbage piece with chile mixture by using your hands. (Rubber gloves are highly recommended.) Pack coated cabbage leaves inside air-tight glass jars or containers; cover each tightly with a lid. Keep jars at room temperature for fermentation to occur, about 2 days. Refrigerate kimchi after the 2 days.

  • Cut the cabbage in half and remove the core. Cut each half in half and slice each resulting quarter into thin ribbons. Mix with carrots in a large, nonreactive bowl.
  • In a separate bowl, whisk together the remaining ingredients.

Instant-Pot Korean Chile-Braised Brisket and Kimchi Coleslaw image

Steps:

  • To pressure cook it:
  • Rub the beef with the chile flakes, paprika, salt, and pepper. Cover and refrigerate for 1 hour and up to 24 hours.
  • Set the electric pressure cooker to sauté (or use a large skillet). Add a tablespoon of the oil, let it heat up for a few seconds, and then add a batch of the beef and sear until it's browned all over, about 2 minutes per side, adding more oil as needed. Transfer the beef to a plate and repeat with the remaining batches.
  • If the pot looks dry, add a bit more oil. Add the onion and sauté until golden, 3 to 5 minutes. Add the garlic and ginger and sauté for 1 minute longer. Add the beer, gochujang, ketchup, soy sauce, brown sugar, fish sauce, and sesame oil. Scrape the mixture into the pressure cooker if you have used a skillet.
  • Cover and cook on high pressure for 90 minutes. Let the pressure release naturally for 20 minutes, and then release the remaining pressure manually.
  • To make the kimchi coleslaw, combine the cabbage, kimchi, both oils, lime juice, and salt in a large bowl and toss well. Taste, and add more salt or lime juice if needed.
  • Transfer the beef to a plate or a rimmed cutting board and tent with foil to keep warm. Set the pressure cooker to sauté and simmer the sauce for 15 to 20 minutes, until it is reduced by half or two-thirds (remember that it thickens as it cools). Use a fat separator to skim off the fat, or let the sauce settle and spoon the fat off the top. Serve the sauce alongside the beef, with the kimchi coleslaw.
  • Slow Cooker Variation:
  • Cut the beef into 6 to 8 pieces instead of 3 or 4 pieces. Marinate and brown as in steps 1 and 2. Place the meat in the pot and cover with the sautéed onion mixture from step 3. Cook on high for 7 to 9 hours or low for 10 to 12 hours.

Steps:

  • To make slaw: Toss the cabbage, carrots, red bell pepper and half of the scallions with the dressing. Let sit for 15 minutes, toss again and transfer to a large serving platter.
  • For pork: Mix together marinade ingredients (listed with pork). Toss the pork with 1/2 C of the sauce. Reserve the rest. Marinate for up to 2 hours in the refrigerator or 25 minutes at room temperature.
  • Heat 2 T canola oil in a heavy 12" skillet over a med-high flame until shimmering hot. Remove the pork from the marinade, shaking off the excess, and transfer the pork to a clean plate. Discard the marinade and add half of the pork medallions to the skillet, spacing them evenly. Cook them without touching until well browned, about 2 minutes. Flip and cook until the pork is just cooked through, about 2 more minutes. Set the pork on top of the slaw. Pour out the oil and wipe the pan with paper towels (if the drippings on the bottom of the pan look like they may burn, wash the pan). Return the pan to medium-high heat. Add the remaining 2 T canola oil and cook the remaining medallions in the same manner. Top the slaw with the remaining pork and pour the reserved sauce on top. Serve immediately, sprinkled with the rest of the sliced scallions, and your choice of garnish.

Mix the rest of the coleslaw vegetable ingredients together with the cabbage, holding back some sliced perilla leaves and sliced scallions to garnish on top.
  • In a smaller bowl, whisk together the sauce ingredients. Let stand for a couple minutes. It will thicken up slightly.
  • Add some of the sauce to the coleslaw and using kitchen gloves or tongs, mix well until all the ingredients are evenly covered with sauce. Use only what you need. Transfer the coleslaw to a serving bowl or platter and top with the reserved remaining sliced perilla leaves and scallions. Garnish with more sesame seeds and drizzle of sauce.
