Asian Asparagus and Mushrooms image

Steps:

  • Cut 1 bunch asparagus into thirds. Heat 2 teaspoons sesame oil in a skillet over medium heat. Cut a 1-inch piece ginger into matchsticks, add to the skillet and cook, stirring, 1 minute. Add 3 cups quartered shiitake mushroom caps and 1 sliced garlic clove and cook, stirring, 2 minutes. Add the asparagus and 1/3 cup water; bring to a boil, cover and cook until crisp-tender, 3 minutes. Add 1 tablespoon each soy sauce and butter; cook, stirring, 1 minute. Season with salt and pepper.

Steps:

  • Heat oil in a large skillet or wok over medium-high heat. Add asparagus and mushrooms, and saute just until tender, about 5 minutes. Remove from heat. Sprinkle with toasted sesame seeds, and season with salt and pepper. Serve hot.

Steps:

  • Bring a pot of water to boil, add salt and asparagus and cook for 1 minute.
  • Remove and rinse asparagus in cold water, drain well on paper towels.
  • In a small bowl whisk together hoisin, rice wine and sesame oil.
  • Heat peanut oil in a large skillet.
  • Add sesame seeds to center of the pan and cook until the seeds are browned, about 5 minutes.
  • Add ginger and garlic and cook 1 minute.
  • Add hoisin mixture, asparagus and salt.
  • Stir often until asparagus is coated and heated through, 1 minute.

  • Heat the oil in a 12-inch skillet over high heat until shimmering hot. Add the asparagus, mushrooms, and scallions, and cook, stirring occasionally, until the asparagus is just shy of crisp-tender, about 3 minutes. Add the garlic, ginger, and sesame seeds and stir-fry until the garlic and ginger are golden and the asparagus is crisp-tender, about 1 minute more. Add 2 Tbs. water and scrape the bottom of the pan. Stir in the soy sauce and sesame oil, and season to taste with salt.

Steps:

  • Bring a pot of lightly salted water to a boil. Lightly cook the asparagus into the boiling water for 2 to 3 minutes. Drain and immediately plunge the asparagus into a bowl of ice water until the asparagus is cool; drain and pat dry.
  • Toast the sesame seeds in a dry skillet over medium heat until lightly browned, 3 to 5 minutes; transfer to a dish and set aside to cool.

Steps:

  • In a large skillet or wok, cook beef over medium heat until no longer pink; drain and set aside. In the same pan, stir-fry the asparagus, water chestnuts, mushrooms and garlic in oil for 5 minutes or until crisp-tender. , In a small bowl, combine cornstarch and broth until smooth. Stir in the hoisin sauce, soy sauce and ginger. Pour over vegetables. Return beef to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in tomato. Asparagus doesn't have to be treated as a delicate, fragile thing, napped only with butter or creamy sauces, or served plain with olive oil and salt. That's fine for the first week or two of the season, but then it's time to dial up the interest factor and add some spice. Asparagus actually stands up quite well to aggressive flavors. A quick toss in a hot wok with garlic, ginger and chiles doesn't overwhelm it at all, at least if you don't overcook the spears. Instead, the vegetable's sweetness becomes accentuated by contrast.

Simple Spicy Asparagus in a Wok image

Steps:

  • Snap off and discard bottoms of asparagus, then cut into 2-inch pieces (halve thicker pieces lengthwise first).
  • Set wok over high heat and add vegetable oil. Add dried peppers and let sizzle, then add asparagus, tossing well to coat. Season with salt and pepper. Stir-fry for a minute or so, then add chile paste, garlic, ginger, orange zest and jalapeño. Continue cooking over high heat for a minute, maybe less, until asparagus is cooked but still firm and bright green. (It will continue cooking off the heat.)
  • Mound asparagus on a serving platter and drizzle with sesame oil. Sprinkle cilantro, green onion and sesame seeds over the top.

  • Heat a very large dry skillet over medium heat. Add the sesame seeds and stir frequently for about 1 or 2 minutes, until they start to become golden. Transfer them to a plate and wipe out the skillet with a paper towel or a dish towel. Trim off the stems, then wipe the caps of the mushrooms with a damp paper towel to clean them. Slice the mushrooms into 1/2-inch slices.
  • Trim the bottoms off of the asparagus, and if they are thick and the peel is tough, use a vegetable peeler to peel of the outer layer of the asparagus on the bottom half of the stalks. Cut the asparagus into 1-inch pieces.
  • Heat 1 tablespoon of the sesame oil in a very large skillet over medium heat. Add the mushrooms and the asparagus, season with salt and pepper and sauté for 5 or 6 minutes, until the mushrooms are tender and the asparagus is crisp tender. Drizzle over the remaining tablespoon of sesame oil and toss well. Transfer to a serving dish and sprinkle over the toasted sesame seeds. Serve hot or warm.
