Tortellini with Peas and Prosciutto image

Steps:

  • Bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs.
  • Meanwhile, heat a large skillet over medium heat. Add the olive oil and prosciutto and cook until crisp, 3 to 4 minutes. Stir in the garlic and tomato paste and cook until fragrant, about 1 minute. Ladle in about 1 cup of the pasta cooking water and simmer until reduced by about half, 3 to 4 minutes. Add the cream and simmer until slightly thickened, 2 to 3 minutes.
  • About 2 minutes before the tortellini are done, add the peas to the boiling water and cook until just tender. Drain the tortellini and peas and add to the skillet, tossing to coat with the sauce. Stir in the parsley. Sprinkle with the parmesan cheese.

Steps:

  • Bring a large pot of salted water to a boil. Add the tortellini and cook until tender, about 4 minutes. Reserve 1 cup cooking water, then drain.
  • Return the pot to medium heat and add the butter and 1/2 cup of the reserved cooking water. Cook, swirling the pot, until the butter melts and combines with the water. Add the tortellini and arugula and gently toss to coat, adding more cooking water as needed to loosen. Season with salt.
  • Divide the tortellini among bowls. Season generously with pepper and sprinkle with the parmesan. Top with the prosciutto.

Steps:

  • Cook tortelloni in a pasta pot of boiling salted water (2 tablespoons salt for 6 quarts water) according to package instructions.
  • While tortelloni boils, cook garlic, prosciutto, corn, 1/2 teaspoon salt, and 1/4 teaspoon pepper in butter in a large heavy skillet over medium-high heat, stirring occasionally, until corn is just tender, 4 to 5 minutes.
  • Meanwhile, chop tomatoes.
  • Combine corn mixture and tomatoes in a large bowl.
  • Reserve 1/4 cup pasta-cooking water, then drain tortelloni and add to vegetables along with reserved cooking water and basil. Toss well and season with salt and pepper.

Steps:

  • Cook the tortellini in boiling water according to package directions. Drain and set aside.
  • Cook the frozen peas in a small amount of salted water until just tender. Drain and set aside.
  • Cut the prosciutto into julienne strips about 2 inches long.
  • Saute the prosciutto and mushrooms in a small amount of butter until just heated through. Set aside.
  • Melt the butter in a medium saucepan, then add the flour.
  • Cook over medium heat, stirring constantly, until the flour is a light golden color.
  • Add the half-and-half and whisk until thoroughly blended.
  • Continue to cook, stirring often, until the sauce thickens slightly.
  • Place the egg yolk in a separate bowl and beat slightly. Mix about 1/2 cup of the hot half-and-half mixture into the egg yolk.
  • Slowly whisk back into the hot mixture and cook over medium low heat for another few minutes, stirring constantly.
  • Add the nutmeg and parmesan cheese and stir until the cheese is melted. Remove from heat.
  • In a large serving bowl, combine the tortellini, peas, ham and mushrooms. Pour the sauce over and toss gently but thoroughly to coat.
  • Sprinkle with grated parmesan cheese and serve immediately.

  • Put olive oil and butter in a 10-in. frying pan over medium-high heat. Cook until butter melts.
  • Add garlic and salt and cook, stirring, until fragrant, 1 to minutes.
  • Add rice and cook, stirring, until rice is opaque.
  • Add broth, stir and turn heat to high. Bring to a boil, cover, reduce heat to low, and simmer undisturbed while rice absorbs liquid, about 15 minutes (then remove cover to check).

  • Saute garlic in olive oil and 1 tablespoon melted butter in a large saucepan until golden brown. Add prosciutto and the next 6 ingredients; bring to a boil.
  • Reduce heat, and simmer 15 to 20 minutes or until the mixture thickens. Add the wine, and cook 1 to 2 minutes.
  • Cook tortellini according to package directions. Drain; place in a bowl. Add 1/4 cup Romano cheese and 1 tablespoon butter; toss.

Steps:

  • Bring a large pot of salted water to boil over high heat. Stir in tortellini and cook until pasta is just al dente. Add peas to pot for final 30 seconds to 1 minute of cooking time. (I just defrost my peas or run some warm water over them). While the pasta is cooking in another small pan saute the onions and garlic in tablespoon of butter or oil till soft and set aside.
  • Drain tortellini and peas in a colander and immediately return to pot. Stir in butter, cream, Parmesan, sauteed onions and garlic and the ham. Season with salt and pepper. Turn stove on to medium heat and cook tortellini mixture, stirring frequently, until butter has melted, ingredients are heated through and sauce has thickened slightly, about 2-4 minutes. Serve immediately.

  • In a saucepan add bouillon crystals and 1 Tbs butter to 2 cups water and bring to a boil.
  • Lower heat to low, stir in rice and simmer, covered, about 20 minutes.
