ZESTY HADDOCK WITH CRUSHED POTATOES & PEAS
Being pushed for time doesn't mean you have to eat unhealthily, as this quick and low-fat fish supper proves

Steps:
- Cover the potatoes in cold water, bring to the boil, then turn to a simmer. Cook for 10 mins until tender, adding peas for the final min of cooking. Drain and roughly crush together, adding plenty of seasoning and 1 tbsp oil. Keep warm.
- Meanwhile, for the dressing, mix 1 tbsp oil, the lemon juice and zest, capers and chives with some seasoning.
- Dust the fish in the flour, tapping off any excess and season. Heat remaining oil in a non-stick frying pan. Fry the fish for 2-3 mins on each side until cooked, then add the dressing and warm through. Serve with the crush and broccoli.

HADDOCK PROVENCAL
Another quick, weeknight recipe, but good enough for company (I make it for Christmas eve dinner every year). I can usually have the fish, rice pilaf, and steamed vegetable on the table in 30 minutes. This is also good using scallops (or any white fish). My family (even the kids) love this. Update: I increased the cooking time from 10 to 15 minutes due to comments, but really, with fish, you are going to have to use some judgment - oven, thickness of fillets, and personal preference will all play a role. I still think 5 minutes of broiling is usually right on for getting the top bubbly and a little brown.

Steps:
- Preheat oven to 350. Lightly grease/spray a large shallow baking dish.
- In a small sauce pan, melt butter and add oil to heat through.
- Add garlic and saute until soft - do not burn.
- Add lemon juice and bring to a boil, turn down heat to low.
- While the sauce is cooking, mix the bread crumbs and cheese together.
- Place fish in 9x13 baking pan skin side (if you got it with skin) down.
- Sprinkle the bread crumb mixture over the fillets.
- Drizzle with the garlic butter.
- Bake for approximately 15m on 350 degrees.
- Broil for an additional 5 minutes or until browned on top.

- Combine the veggies in a heavy frying pan.
- Cook for about 5 minutes over low heat, stirring constantly, until the green onion wilts Add the lentils, chicken broth, and garlic.
- Stir.
- Bring to a boil over medium heat, then lower the heat, cover and simmer for 10 minutes.
- Stir in the cayenne pepper and parsley.
- Take care not to overcook, the lentils should have a crunch.

- In a large non-stick skillet, bring the wine to a boil over medium-high heat.
- Add the garlic, onions, carrots, celery, rice and lentils.
- Cook, stirring often, for 2 minutes.
- Add the black beans, basil, cumin, curry powder, hot pepper sauce and bay leaf.
- Cook, stirring often, for 2 minutes.
- Add the stock and bring to a boil.

Steps:
- Clean the lentils with fresh cold water to avoid foaming when cooking.
- Mix 2 cups of lentils with the 8 cups of water and 1 tablespoon of salt.
- Heat on high, uncovered for approximately 30 minutes, mixing slightly every 10 minutes, removing any foam that may have come up.
- After the lentils turn tender and soft (not melted), make sure there is only about 2 cups of water remaining (add or remove water).
- Add the half cup of rice. Cook for 10 mins at medium fire.
- Simultaneously with the rice, fry the chopped cup of onion in the olive oil and vegetable oil until golden brown (should be about 10 minutes).
- After the 10 minutes pass, slowly pour the oil and onion over the lentils and rice. Lower the heat to Low, and let it lay for 10 minutes (do NOT mix).
- After the 10 minutes pass, add the quarter cup of vinegar and mix everything.
- Cover with a thick clean kitchen towel and leave covered for about 10 minutes.
- After the 15 minutes pass, you should have a thick pilaf of lentils and rice, with onions showing up here and there.

LENTIL PILAF
A recipe from Ricardo that can be frozen and used in recipe#340401 . Edit : I made it on Nov 26, 2008, and I used red lentils. They're smaller so it tooked only 10-15 minutes of cooking. But it was like a puree. I'm going to use half of it to do the soup that I mention in this recipe.

- In a saucepan, brown shallot in oil. Add lentils and stir well. Add chicken stock and bay leaf. Bring to boil. Cover and let simmer at low heat about 45 minutes or until lentils are tender. Add more stock is needed. Drain if needed. Add salt and pepper at the end of cooking. Remove bay leaf.
- You'll need half this recipe to do the Vegetable Lentil Cream/Soup.
