THE BEST SPINACH ARTICHOKE DIP
This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

- Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
- Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
- Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.
ASAGIO SPINACH AND ARTICHOKE DIP FOR GAME DAY
This is a fave at all parties. I serve it up in a nice bread bowl, surrounded with the chunks of bread left over from the bowl and with some tasty sesame and wheat crackers! The asagio cheese totally makes this dip a winner! You can serve this chilled or warm its a matter of preference. I have included directions for both.

Steps:
- 1. Mix first five ingredients together in a medium bowl.
- 2. Add remaining ingredients and mix all together well.
- 3. Season with salt and pepper and garlic powder. Add a pinch of cayenne pepper if you like a bit of heat. (I like to make this the day before the party and refrigerate so the flavors have time to combine) FOR a hot version: Pour into a 9 x 9 baking dish and bake in preheated 350 degree oven for about 30 minutes. Serve warm
- 4. Serve with crackers, tortilla chips, pita chips and/or in a bread bowl

- Preheat oven to 350 degrees F (175 degrees C).
- Combine the cream cheese, mayonnaise, sour cream, and garlic in a mixing bowl. Add the Asiago cheese and parsley; mix well. Press as much moisture out of the spinach as you can; stir into the mixture. Spread into the bottom of an 8 1/2 x 10 baking dish.
- Bake in the preheated oven until the middle is bubbling and the edges are golden brown, 20 to 25 minutes.

A creamy, cheesy, flavorful dip. As it is a dip, most of the ingredients aren't an exact science and can be changed according to taste. Other cheese can be substituted for the Asiago cheese, or mixed together with Asiago, such as Parmesan or Cheddar cheese.

STOVETOP SPINACH AND ARTICHOKE DIP

- To a medium saucepot preheated over moderate heat, add about 2 tablespoons extra-virgin olive oil, 2 turns of the pan in a slow stream. Add butter to oil. When butter melts, add garlic and onions to the pot. Sprinkle in thyme leaves. Saute 2 minutes, add chopped red pepper. Saute mixture a minute more. Sprinkle in flour, stir to coat vegetables. Cook flour 1 minute. Whisk in wine and reduce by half. Whisk in stock and thicken sauce 1 minute. Stir in half-and-half or cream. When sauce returns to a bubble, add artichokes, spinach and cheeses. Keep stirring until cheeses melt and sauce is well combined. Add salt and pepper and adjust seasonings, to your taste.
- Pour dip into hollow bread bowl on serving platter and surround with sliced multi or whole grain bread for dipping. Reserve extra dip to warm and refill as necessary. Cut up bread bowl when baguette slices are gone -- the bowl is the best part as it absorbs juices from the dip.
CLASSIC SPINACH-ARTICHOKE DIP WITH MOZZARELLA AND PARMESAN

- Squeeze as much liquid out of the spinach as possible with a a clean dishtowel or paper towels. Melt butter in a large pan over medium-high heat. Sauté shallot until soft, 3-5 minutes. Stir in paprika and cook until fragrant, about 30 seconds. Add spinach, artichoke hearts, cream cheese, cream, salt, and pepper and cook, stirring, until warmed through and slightly reduced, 8-10 minutes. Fold in mozzarella and Parmesan and cook until melted; add more cream if needed to reach desired consistency. Remove from heat and stir in lemon juice.

- Dip can be made 1 day ahead. Store in an airtight container and chill. Warm before serving.

- Preheat your oven to 375 degrees F. Thaw your frozen spinach in the microwave. (I can fit the contents of two packages in a glass 9x13 pan and use high heat for 5 minutes.)
- While the spinach is in the microwave, peel and chop 1/4 of a large red onion. Grate your cheeses in a blender or food processor.
- When the spinach is thawed, drain out the liquid in the sink by grabbing small handfuls of spinach and squeezing them over a strainer. Set your dried spinach in a large mixing bowl.
- Drain the artichoke hearts. (If using frozen ones, thaw them in the microwave and drain.) Roughly chop the artichoke hearts, leaving some chunks. Pat them dry with a paper towel and add them to your large mixing bowl.
