BETTY'S FAMOUS EGGNOG

My Mom has been making this creamy eggnog for everyone for at least 25 years, and more people ask for it each year. It uses three types of liquor--you do not need the best brands, but do not buy the cheapest either. Note that raw eggs are 'cooked' by the alcohol. Once made, keep the eggnog refrigerated and use within a week, stirring gently before serving to re-incorporate the egg whites that rise to the surface.

Steps:

  • Beat the eggs and sugar together in a very large bowl until thick and light-colored. Stir in the bourbon and rum, mixing until sugar has dissolved. Let stand about 1 hour.
  • Meanwhile, whip the egg whites in a separate bowl until stiff peaks form.
  • Stir the whipping cream and half and half into the egg yolk mixture until thoroughly blended. Slowly stir in the brandy. Fold in the egg whites, blending evenly. Cover and refrigerate two hours before serving. May be stored in the refrigerator up to one week.
  • Serve in small cups or glasses dusted with a pinch of nutmeg.

AMAZINGLY GOOD EGGNOG

It's taken me several years to perfect this homemade eggnog recipe. Now everyone asks, 'When are you making the eggnog?!' This uses cooked eggs for safety, and you can use more or less rum to taste. It's a bit of work to make, but well worth it. You'll never buy store-bought eggnog again! Enjoy!

AUNT KAT'S CREAMY EGGNOG

This is the most amazing eggnog you will ever try. My husband would never drink eggnog, he tried this and could not get enough of the stuff. I made the non-alcoholic version since I was planning to let the kids have some too. I got this recipe from Southern Living in an article by Jan Moon. It is so good, you must try it!!!!

Steps:

  • Heat milk in a large saucepan over medium heat (Do not boil).
  • Beat eggs and salt at medium speed with an electric mixer until thick and pale; gradually add sugar, beating well.
  • Gradually stir about 1/4 of hot milk into egg mixture; add to remaining hot milk, stirring constantly.
  • Cook over medium-low heat, stirring constantly, 25 to 30 minutes or until milk mixture thickens and reaches 160 degrees.
  • Stir in bourbon (or milk), vanilla, and 1/4 tsp of nutmeg.
  • Remove from heat, and cool.
  • (I strain mine at this point to avoid having any curdled clumps of egg -- if you think you don't have any then don't worry about it).
  • Cover and chill up to 2 days.
  • Beat whipping cream at medium speed with an electric mixer until soft peaks form.
  • Fold whipped cream into milk mixture.
  • Sprinkle with remaining 1/4 tsp nutmeg before serving.

HOMEMADE EGGNOG

Freshly grated nutmeg offers a more delicate flavor and aromatic scent than the preground variety in this Homemade Eggnog. The eggs in both the base and the meringue are cooked, so food safety shouldn't be a concern.

Steps:

  • In a medium heatproof bowl, whisk egg yolks and 1/2 cup sugar until pale yellow and thick, about 2 minutes. In a medium saucepan, bring milk and salt to a bare simmer. Whisking constantly, slowly pour hot milk mixture into yolk mixture.
  • Pour yolk mixture back into saucepan. Cook over medium heat, stirring constantly with a wooden spoon, until mixture is just thick enough to coat back of spoon and hold a line drawn by your finger, 3 to 5 minutes.
  • Pour mixture through a fine-mesh sieve into a large bowl; discard solids. Let cool, stirring occasionally, about 20 minutes. Add cream, bourbon, rum, and cognac; cover and refrigerate overnight.
  • Whisk remaining 1/4 cup sugar and egg whites in a heatproof mixer bowl set over (not in) a pan of simmering water. Whisk until sugar is dissolved and mixture is warm (it should feel smooth between your fingers), 2 to 3 minutes. (For fully cooked eggs, a thermometer inserted into meringue should register 160 degrees.) Remove from heat. With a mixer on high speed, beat until stiff peaks form, about 5 minutes. Fold into eggnog.
  • Pour into glasses (or a punch bowl); top with a dollop of whipped cream and sprinkle with nutmeg.

6 large egg yolks, plus 2 large whites
3/4 cup sugar
3 cups whole milk
Large pinch of coarse salt
1 cup heavy cream
2 ounces bourbon, such as Michter's or Maker's Mark
2 ounces dark rum, such as Appleton Estate
1 ounce cognac
Unsweetened freshly whipped cream, for serving
Freshly grated nutmeg, for serving
