AUNT RUTHIES PINAPPLE CAKE
My friend Ruth who we all call Aunt Ruthie gave me this recipe. It is a hit!

Steps:
- Mix all cake ingredients in large bowl and put in a greased 9x11 cake pan. Bake at 350 degrees for 30 minutes
- While cake is baking make the icing and ice cake while it is still hot. The icing is thick and it will cook some on the hot cake melting into the cake a little but also will seal off.

Down home crab cakes are heavy on the crab, light on the filler.

- Stir the cracker crumbs and water together in a mixing bowl. Let stand 1 minute to soften the crackers. Add the crabmeat, egg, mustard, and mayonnaise. Season with Worcestershire sauce, seafood seasoning, salt, and black pepper; stir until evenly mixed.
- Heat the vegetable oil in a large skillet over medium heat. Form the crab mixture into patties 3/4-inch thick. Cook in the hot oil until golden brown on each side and hot in the center, about 2 minutes per side. Drain on a paper towel-lined plate before serving.

AUNT RUTH'S APPLE CAKE
Use any apples you like. I have seen my mother make this cake with apples on the verge on rotting. It seems to be the no fail cake recipe! Different apple varieties will vary the taste.

Steps:
- 1. mix all ingredients together. mixture will be dry. they do not have to be added in any certain order
- 2. spray the bottom of a 13X9 pan with cooking oil spray (i.e. Pam)
- 3. Pack mixture in pan
- 4. Bake for 1 hour at 350 degrees. cake will be moist and golden brown. Serve hot or at room temperature with ice cream or whipped cream!
THE APPLE LADY'S APPLE CAKE (GATEAU AUX POMMES DE LA REINE DES POMMES)
Steps:
- Preheat the oven to 400 degrees F.
- Butter a 9-inch springform pan and set it aside.
- In a large bowl, combine the flour, sugar, baking powder, and sea salt, and stir to blend. Add the vanilla extract, eggs, oil, and milk, and stir until well blended. Add the apples and stir to thoroughly coat them with the batter.
- Spoon the mixture into the prepared cake pan. Place the pan in the center of the oven and bake until fairly firm and golden, about 25 minutes.
- Meanwhile, prepare the topping: In a small bowl, combine the sugar, egg, and melted butter, and stir to blend. Set it aside.
- Remove the cake from the oven and pour the topping mixture over it. Return the cake to the oven and bake until the top is a deep golden brown and the cake feels quite firm when pressed with a fingertip, about 10 minutes.
- Transfer the cake pan to a rack and allow to cool for 10 minutes. Then run a knife around the sides of the pan, and release and remove the springform side, leaving the cake on the pan base. Serve at room temperature, cut into thin wedges.
AUNT MARY'S APPLE CAKE
My friend Robin's Aunt Mary, both of whose parents were born in Hungary, was a legendary cook. This is one of her cakes--a very moist and delightful cake.

Steps:
- Preheat over to 350 degrees F.
- Sprinkle apples with sugar and let stand.
- Mix beaten egg and butter.
- Sift in flour, soda, salt and cinnamon and mix very well.
- Fold into apples and make sure the apples are well and evenly coated.
- Mix in raisins and, if desired, nuts.
- Note: we use raisins which have been soaked in bourbon.
- Note 2: If using regular raisins, make sure you plump them in warm water or rum or the like, then drain before adding.
- Place in a buttered 8" x 8" square baking dish or in a buttered bundt pan and bake for about 50 minutes.
- Cool briefly on rack in pan; turn out of the pan and allow to cool to room temperature on a rack.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder; gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes. Run a knife around sides and center tube of pan. - Preheat oven to 350 degrees. Butter and flour a 9-inch tube pan. Beat the oil and sugar together in a mixer (fitted with a paddle attachment) while assembling the remaining ingredients. After about 5 minutes, add the eggs and beat until the mixture is creamy.
- Sift together 3 cups of flour, the salt, cinnamon and baking soda. Stir into the batter. Add the vanilla, apples, walnuts and raisins and stir until combined.
- Transfer the mixture to the prepared pan. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan before turning out. Serve at room temperature with vanilla ice cream, if desired.

I looooove apple cake. So when this one came to me in a publication from the Bucoda Improvement District, I tagged it immediately. Have not made it yet but certainly have added it to the list.

Steps:
- Preheat oven to 350 degrees.
- Prepare a large bundt or tube pan with a light coating of cooking spray.
- Mix together the apples, sugar and cinnamon and set aside.
- Add all of the ingredients for the batter to a large bowl and mix at medium speed for one minute. Scrape down the sides of the bowl to make sure all ingredients are being incorporated. Mix for an additional 3 minutes.
- Pour one third of the batter into the baking pan. Cover with a layer using 1/2 the seasoned apples. Repeat with another 1/3 of batter and the remaining apples. Finish with the final 1/3 of batter.
- Bake for 90 to 105 minutes. Remove from oven.
- Cool for 10 minutes then invert onto a serving plate.
- While the is cooling (10 minutes), combine all ingredients for the glaze. Drizzle on top of the cake.

- Mix ingredients together. Spray bundt pan with non-stick spray. Put in pre-heated 350 degree oven for one hour. Whatever you do, don't open the oven in the first 30 minutes.
