BROCCOLI WITH LEMON BUTTER SAUCE

A fast and zesty take on frozen broccoli. Can also use fresh broccoli. Great summer dish. Can be served hot or cold.

Broccoli with Lemon Butter Sauce image

Steps:

  • In a large skillet, combine the butter, water, lemon juice, cayenne pepper, salt and pepper. Bring to a simmer over medium heat. Add the broccoli to the pan, stir to coat, and cover with a lid. Cook for 10 to 15 minutes over medium-low heat, stirring once, until broccoli is tender but still bright green. Serve warm, or refrigerate and serve cold.

Broccoli with Cheddar Cheese Sauce image

Steps:

  • Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
  • Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
  • Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. Slowly add the cheese by handfuls and stir with a wooden spoon until melted and smooth.

3 pounds broccoli, cut into florets, stems discarded or saved for another use

  • In a medium stockpot with a lid, place a steamer over, but not touching, boiling water. Put the sliced broccoli stems into the steam, cover and steam for 1-2 minutes. Add the florets, sprinkle with salt, and re-cover. Steam a further 3-4 minutes or until the broccoli florets are bright green and are tender, but still crisp.
  • Drain the broccoli in a colander, plunge into cold water if eating cold. Drain well and pat dry with paper towels. Transfer to a serving dish, drizzle with sesame remoulade sauce and toasted sesame.
