Steps:
- In a 4- or 5-qt. slow cooker, combine all ingredients. Cook, covered, on low, until heated through and cheese is melted, 3-4 hours, stirring once.

This creamy, sweet, cheesy Korean snack or side dish is traditionally brought to the table bubbling away in a sizzling-hot dish, or it's made in an insert around the grill right at the table when dining at a Korean barbecue. It often relies on canned corn, but this version uses fresh sweet corn -- almost as quick as using canned and definitely delicious.

Steps:
- Position an oven rack in the top third of the oven and preheat the broiler to high.
- Heat the canola oil in a large cast-iron skillet over medium-high heat. Add the onions and bell pepper and cook, stirring occasionally, until the vegetables soften, 3 to 4 minutes. Add the corn and cook, stirring, until the corn is softened and browned, 4 to 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Set aside for 10 minutes.
- Toss the corn mixture in a large bowl with the mayonnaise, sugar, 1 teaspoon salt and a few grinds of black pepper until well coated. Layer the corn mixture evenly back in the skillet. Sprinkle the cheese on top and broil until the mozzarella is bubbly and golden, 2 to 3 minutes. Garnish with gochugaru and sliced scallions if using.

- Heat corn oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Whisk together milk, flour, beer, salt, and eggs to form a smooth, rather thin batter. Place cheese curds, about 6 or 8 at a time, into the batter, stir to coat, and remove with wire strainer. Shake the curds a time or two to remove excess batter. Deep fry the curds until golden brown, 1 or 2 minutes. Drain on paper towels; serve hot.

This is a great, simple recipe for caramel corn using the corn puffs. This is a favorite in our house for young and old.

Steps:
- Put corn curls in a large roaster, or sided baking sheet.
- Preheat oven to 250 degrees.
- In a large sauce pan, bring butter, Karo syrup and brown sugar to a boil. (The sauce pan will seem too large for the quantity of sauce.).
- Boil for 4 minutes stirring constantly.
- Add 1 baking soda (it will GREATLY expand, and fill the sauce pan).
- Pour over corn, and stir.
- Bake for 45 minutes, stirring every 15 minutes.
- When done, put on newspaper, or in brown paper bag to cool.

AIR FRYER CORN RIBS
This is my fun take on air-fried elote ribs. Cutting the corn this way causes them to curl up in the shape of ribs once cooked. This also makes the corn a lot easier to handle and eat, not to mention a lot less messy.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place an ear of corn on a cutting board and cut in half lengthwise. Cut each half in half lengthwise. Repeat with remaining ear of corn. You should have 8 "ribs" total.
- Whisk olive oil, chili powder, garlic powder, and black pepper together in a bowl until smooth. Brush onto both sides of each rib and place in the air fryer basket.
- Air fry for 12 minutes, flipping halfway through the cook time.
- Meanwhile whisk mayonnaise, lime juice, and hot sauce together until thoroughly combined.
- Transfer corn ribs to a serving plate. Drizzle sauce over the ribs and top with cotija cheese and cilantro.

- Heat your broiler. In a medium bowl, combine corn, bell pepper, mayonnaise, sugar, salt and pepper.
- In an 8-inch cast-iron or ovenproof skillet, melt the butter over high. Add the corn mixture and sauté just until warmed, 2 to 3 minutes.
