GRILLED CHEESE AND ONION SANDWICHES

Steps:
- Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 min. or until golden brown. Cover; simmer on low heat 10 min., stirring occasionally Remove from heat. Stir in A.1.
- Place 1 cheese slice on each of 6 bread slices; cover with onions, then remaining cheese and bread slices. Spray outsides of sandwiches with cooking spray.
- Cook in covered nonstick skillet on medium heat 3 min. on each side or until cheese is melted and sandwiches are golden brown on both sides.

Steps:
- 1. Grate the cheese in a bowl.
- 2. Add the onions and mayonnaise.
- 3. Salt and pepper to taste.
- 4. Mix all ingredients together.
- 5. Spread butter on your bread.
- 6. Spread onion mixture on one slice of bread and place the other slice of bread on top and cut in half.
- 7. *Really good served with your favorite soup.
GRILLED CHEESE SANDWICH WITH RED ONION JAM
Steps:
- Heat the olive oil in a large skillet over medium-low heat. Add the onions and cook until soft and translucent about 10 to 15 minutes. Add the sugar, red wine vinegar and 3 tablespoons water and cook until the liquid is reduced completely and the onions are caramelized, about 10 minutes. Set aside.
- Butter the outside of each slice of bread and arrange, butter side down, on a sheet pan. Put 1 piece of Taleggio onto a slice of the buttered bread, then a piece of Gorgonzola. Top with a heaping tablespoon of the onion jam, and another slice of the Taleggio. Cover it another slice of bread. Repeat with remaining ingredients.
- Heat a large skillet over medium-low heat. Put the sandwiches into the skillet and cook until the bread is toasted and golden and cheese is melted, about 4 minutes per side. Slice each sandwich in half and serve.
BRITISH-STYLE CHEESE AND ONION SANDWICH FOR 2
About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. I believe this is my first English recipe posted here but the fine English people have no cause for concern.

- In a large heavy bottom skillet, or cast iron pan, heat oil over medium heat. Add onion and saute for 5 minutes, stirring to coat. Turn heat down to medium low. Stir occasionally and continue sauteing for 20-30 minutes. Onions will sweat out their moisture, and eventually caramelize into a beautiful deep golden brown. Add a generous pinch of salt, a splash of port, sherry, or stock (optional) and let the liquid cook off. Remove from pan and wipe it out with a paper towel, to use again. Preheat oven to 350 F
- Spread the bread with whole grain mustard (optional). On two slices, divide and layer shredded Gruyere, top with caramelized onions, sprinkle with fresh thyme leaves, then add the rest of the cheese. “Put the lid on” the sandwiches with the other slices of bread and gently press together
- Heat 2 tablesoons butter (or a combination of butter and oil) in the same skillet over medium heat. Place sandwiches in the pan and toast, carefully flipping when perfectly golden brown and cheese begins to melt. Place in a warm oven to fully melt the cheese -which will preventing the bread from getting too dark. Cut in half and enjoy.
