CHEDDAR BREAD TWISTS

These quick-to-fix bread sticks are light and flaky, with a little crunch. Serve the cheesy twists as a side dish or even as an appetizer with dip. Tracy Travers of Fairhaven, Massachusetts shared the recipe.

Cheddar Bread Twists image

Steps:

  • Unfold puff pastry onto a lightly floured surface. In a small bowl, beat egg white and water; brush over pastry. Sprinkle with cheese and salt., Cut into ten 1-in. strips; twist each strip three times. Place on a greased baking sheet. Bake at 400° for 10-13 minutes or until golden brown.

My family loves eating these zesty bread twists with a spaghetti supper. Soft and light as a feather, they have a perfect balance of garlic and oregano. Be sure to snatch one before passing them around the table.

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water; let stand for 5 minutes. Add the milk, egg, oil, 1 teaspoon salt and 4 cups flour; beat on low speed until smooth. Beat 3 minutes longer. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 8-10 minutes (dough will be sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Do not punch down. Divide dough into eight pieces. Combine cornmeal and oregano; sprinkle over work surface. Roll each piece of dough in cornmeal mixture and shape into a 15-in.-long rope. Cut each rope into three pieces. Twist each piece and place on greased baking sheets., Bake at 400° for 8-12 minutes. Combine garlic powder and remaining salt. Immediately brush twists with melted butter, then sprinkle with garlic powder mixture. Serve with pizza sauce if desired.

Cheesy Bacon Tater Tots® image

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Cook bacon in a large cast iron skillet over medium-high heat until crispy on both sides, about 10 minutes. Place on a paper towel-lined plate and set aside, keeping the bacon grease in the skillet.
  • Reduce the heat to medium and add potato nuggets to the skillet. Season with garlic salt and toss until evenly coated. Cook until the outsides are crisp, about 10 minutes, turning carefully with a spatula once or twice. Remove the skillet from heat.
  • Carefully remove 1/2 of the potato nuggets from the skillet and spread out remaining nuggets in a single layer. Top with 1/2 of the Cheddar cheese. Place remaining nuggets on top of the cheese and top with remaining cheese.
  • Transfer the skillet to the preheated oven and bake until nuggets are warmed through and the cheese is melted and starts to turn golden brown, about 10 minutes.
  • While the nuggets are baking, crumble the cooked bacon. Remove the skillet from the oven and top with crumbled bacon, sour cream, and green onions.

Steps:

  • Cook potatoes in a large pan in plenty of lightly salted boiling water until tender. Drain through colander and return to the pan. Mash until smooth and set aside to cool.
  • Sift the flour into a large bowl and add the yeast and a good pinch of salt. Stir in the mashed potatoes and rub with your finders to form a crumb consistency. Make a well in the center of the mixture and pour in the lukewarm water. Start by bringing the mixture together with a round-bladed knife, and then use your hands.
  • Turn out on to a well-floured surface and knead for 5 minutes and return the dough to the bowl. Cover with a damp dishtowel and leave to rise in a warm place for 1 hour, or until double in time.
  • Turn the dough out and punch down the air bubbles. Knead for a few seconds. Divide the dough into 12 even pieces and shape into rounds. Sprinkle the cheese over a baking sheet. Take each ball of dough and roll it in the cheese. Then roll the cheese-covered roll on a dry surface, forming a sausage shape. Fold the two ends together and twist.
  • Lay the bread twists on an oiled baking sheet. Cover with a damp cloth and leave the bread to rise in a warm place for 30 minutes.
  • Preheat oven to 220°C/425°F. Bake the bread for 10-15 minutes.
