CHEWY CHOCOLATE CHIP OATMEAL COOKIES
I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
- Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

This recipe has always been enticing to me, but as I have been sticking to a low-calorie diet, I have not had the opportunity to enjoy these!! I decided to replace a few ingredients with more "figure-friendly" ones, and I'd love to hear what you think! I love these (almost guilt-free) pancakes with a PASSION.

Steps:
- Mix dry ingredients, the first 7, in a bowl.
- In a another bowl, mix the wet ingredients, the next 4. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas and the raisins.
- Stir in the melted light butter.
- Heat a griddle over medium heat and spray with cooking spray.
- Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn.
- Cakes will cook in about 2 minutes on each side.
- Keep pancakes tented with foil as they come off the griddle to keep them hot.
- Serve with drizzled honey or (sugar free) maple syrup over the top.

- In a large bowl combine the flour, oats, salt, baking powder, sugar, cinnamon, and nutmeg. In a liquid measuring cup or small bowl combine the milk, egg, and vanilla, beating to break up the egg. Add to the flour ingredients and stir just until combined. Do not overmix. Fold in the chocolate chips.
- Oil a nonstick griddle or skillet and set to medium high heat (about 350-375°F). Drop 1/4-cup portions of batter onto the griddle and gently spread to make a pancake shape. Cook for about 3 minutes, or until bubbles start to form in the center and the edges are dry and golden. Carefully flip and cook until the other side is cooked through, about 2 minutes more.
