- In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until beans are crisp-tender. Drain if necessary.

GREEN BEANS AND COUNTRY HAM, SOUTHERN-STYLE RECIPE - (4/5)

Steps:
- Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

- Place ham steak, potatoes, green beans, onion, and butter in a large pot with just enough water to cover. Season with salt and pepper; bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes.

GREEN BEANS WITH COUNTRY HAM
Where I come from, green beans (or just about any kind of beans, for that matter) are cooked low and slow for hours. They need time to absorb all that good flavor of the country ham, onions and other seasoning. You can use any variety of green beans with this recipe (the beans in the photo are Romano) and you can use frozen or drained, and rinsed, canned beans. In my opinion, fresh or frozen taste the best.

Steps:
- In a 4 quart (or larger) dutch oven or stock pot, over medium-high heat, add oil or grease and and ham. (If using ham hock, see step 4.)
- Saute for 1 minute, add onion and continue to saute until ham and onions just begin to brown.
- Reduce heat to low, add minced garlic and saute for 30 seconds.
- Quickly add about 2 cups of water to the pot and increase heat to high. (If using ham hock, add now.)
- Add green beans and enough water to cover by at least 1/12 to 2 inches.
- Bring to a boil, reduce heat to low/medium-low, cover and let simmer for 2 hours, checking every 1/2 hour to see if additional water is needed.
- Add 2 teaspoons ham soup base, cover loosely (to allow some evaporation) and simmer 1 to 3 additional hours, occasionally checking liquid level in pot. (Allow liquid level to reduce to just barely covering the beans.)
- Taste beans and add salt and pepper to taste.
- NOTE: Small red potatoes may be added during last 1/2 hour of cooking if desired.
- Cover and refrigerate leftovers.
GREEN BEANS WITH SMOKED HAM

- Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 7 minutes. Drain, rinse under cold water and blot dry with paper towels; set aside. (This can be done up to 4 hours ahead; cover and refrigerate.)
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ham and continue cooking until warmed through, about 2 minutes. Stir in the vinegar and remove from the heat.
- Add the green beans to the pot and stir until combined and warmed through. Add the parsley and season with salt and pepper.
COUNTRY GREEN BEANS AND HAM
Steps:
- In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Season with salt and pepper. Saute for 2 minutes. Add the reserved ham and beans back to the pan. Cover the beans completely with water. Bring the liquid to a boil, reduce heat to medium low, partially cover and cook for 2 hours. Remove from the heat and reseason if necessary
SLOW COOKER GREEN BEANS, HAM AND POTATOES
I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

- Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
- Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
- To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

We always had these beans with our Christmas dinner. They are very flavorful and a family favorite. Most of the work can be done in advance. Although there is alot of garlic, the cooking process mellows it considerably.

Steps:
- Bring a large pot of water to a boil.
- Add garlic; cook 8 minutes until very tender.
- Transfer to a paper towel using a slotted spoon.
- Pat dry.
- Add salt to pot; return water to boil and add green beans.
- Cook beans until just tender, about 6 minutes.
- Drain beans, rinse under cold water, pat dry and set aside.
- Heat 2 T oil in heavy nonstick skillet over medium-high heat.
- Add ham and saute until crisp, 6 or 7 minutes depending on the moisture content of the ham.
- Set aside.
- Can be prepared 1 day ahead.
- Keep garlic separate from beans and ham.
- Melt butter with remaining oil in a large heavy skillet over medium high heat.
- Add garlic and mash with a fork or the back of a spoon.
- Add green beans and ham.
- Toss until heated through and coated with garlic.
- Season to your taste with salt and pepper.
- Serve.
