FIGS WITH BALSAMIC VINEGAR, MASCARPONE, AND WALNUTS

Figs with Balsamic Vinegar, Mascarpone, and Walnuts image

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Bring wine, vinegar, and sugar to a boil in a 3-quart heavy nonreactive saucepan over moderate heat, stirring until sugar is dissolved, then add figs and gently simmer, uncovered, 5 minutes. Pour figs with liquid into a 2-quart shallow glass or ceramic baking dish and sprinkle with walnuts. Bake, uncovered, until figs are softened and have absorbed about two thirds of liquid, about 30 minutes. Cool slightly, about 15 minutes.
  • Serve warm figs with sauce and a dollop of mascarpone.

1 cup dry red wine
1/3 cup balsamic vinegar
1/2 cup sugar
1 pound dried Mission figs, stems discarded
3/4 cup walnut pieces (2 ounces), toasted
1/2 cup mascarpone

DESSERT VINAIGRETTE FOR FIGS

Vinaigrettes lend lightness and sparkle to food, but they generally land before the dessert course. But here, a warm orange vinaigrette livens up figs for a light and delicious dessert. This easy recipe, which was inspired by one from Michael Moorhouse, the pastry chef at Blue Hill at Stone Barns, comes together quickly.

Steps:

  • Warm orange juice in a small saucepan. Add vinegar and sugar, and cook over medium heat until sugar dissolves. (Do not boil.) Whisk in oil and then butter until dressing emulsifies.
  • Wash fresh figs, and remove stems. Slice figs, and arrange in decorative pattern on a plate. Pour warm dressing on top; serve.

Caramelized Figs with Vanilla Ice Cream and Aged Balsamic Vinegar image

Steps:

  • Preheat broiler.
  • Arrange figs, cut sides up, in a large shallow baking pan. Sprinkle sugar evenly over fruit and broil 2 to 3 inches from heat until most of sugar is melted and deep golden in places, 3 to 5 minutes.
  • Immediately serve figs over ice cream, drizzled with vinegar.

12 firm-ripe fresh figs, trimmed and halved lengthwise
3 tablespoons turbinado sugar such as Sugar in the Raw or packed light brown sugar, forced through a sieve
1 pt super premium vanilla ice cream
1 to 2 tablespoons aged (preferably 10 years or more) balsamic vinegar

  • In a large shallow bowl, stir together sugar and salt. Press the cut side of each fig into the sugar mixture to coat.
  • Heat a large skillet over high heat and add sugar-covered figs, cut side down, and cook until sugar and juices caramelize, about 3-4 minutes. As figs caramelize, turn them over.
  • Remove skillet from the heat and add balsamic vinegar. Return to heat and cook to reduce the vinegar a bit, roughly 30 seconds, making sure to scrape up any caramelized bits on the bottom of the pan.
