CARAMEL-DIPPED DONUT HOLES

Forget caramel apples this fall and try something different with Caramel-Dipped Donut Holes! Plain cake donut holes get a major upgrade with peanuts, crushed apple chips and caramel in this deliciously festive recipe for Caramel-Dipped Donut Holes.

Steps:

  • Cover baking sheet with parchment; spray with cooking spray. Combine nuts and crushed apple chips in small bowl; set aside.
  • Microwave caramels and apple juice concentrate in small microwaveable bowl on HIGH 1 min. to 1 min.15 sec. or until caramels are completely melted and sauce is well blended when stirred.
  • Dip 1 end of 1 lollipop stick into caramel sauce; then insert dipped end into 1 donut hole. Repeat with additional lollipop sticks and remaining donut holes.
  • Spoon caramel sauce over donut holes, 1 at a time, turning to evenly coat all sides of donut hole with caramel sauce. Gently shake off any excess caramel sauce, then dip bottom of donut hole into nut mixture. Place on prepared baking sheet.
  • Refrigerate 30 min. or until caramel sauce is firm.

Steps:

  • In a bowl combine yeast, warm water and sugar to dissolve. Add 1/4 cup all-purpose flour and 1/4 cup cake flour. Stir and set in a warm place 30 minutes to foam up.
  • Add the powdered sugar, salt, potato, and hot water to the foamed yeast along with 1/4 cup all-purpose flour and 1/4 cup cake flour and mix on low to combine with a paddle. Mix on high-speed 30 seconds to combine. Add another 1/4 cup all-purpose flour and mix on high.
  • Flour the bench heavily and knead the dough gently (it may be sticky). Turn into a greased bowl and proof until doubled in bulk, about 1 1/2 hours. Turn dough out onto a floured surface and punch down. In a bowl proof the dough another 30 minutes.
  • Flour surface heavily and pat dough out to about 1/2-inch thick. Cut out doughnut holes, flouring cutter each time, and set on a floured sheet pan.
  • Heat oil to 375 degrees F.
  • Drop doughnut holes in. Flip once and cook no more than 30 seconds. Drain on a paper towel lined sheet pan then soon after dredge in powdered sugar and toss.

  • Add the pastry cream and 1 cup of the salted caramel sauce to a bowl and beat with an electric mixer on medium-low speed until fully incorporated, creamy and smooth. Refrigerate until ready to use. Can be prepared up to 24 hours in advance.
  • Pour the milk into the bowl of a standing mixer, and sprinkle in the sugar and yeast. Stir to combine and then let sit for about 5 minutes to let the yeast begin to come alive. Whisk in the egg, egg yolk, melted butter, vanilla, lemon zest, and nutmeg.
  • Fit a pastry bag with a round or star tip and fill the bag with pastry cream. Insert the tip into the side of each doughnut hole and squeeze in some pastry cream, until you see the sides of the doughnut hole expand a bit. When you remove the piping tip from the doughnut hole, a bit of pastry cream should seep outside, which is how you know you've filled them enough.

  • Whisk 1 tablespoon yeast with 3/4 cup warm milk, in a medium bowl. Once the yeast has dissolved (this will take a minute or two of vigorous whisking), add 3/4 cup flour, and whisk until smooth. Then cover with plastic wrap and let rest in a warm spot.
  • After 30 minutes, use an electric mixer fitted with the paddle attachment on a low speed to combine the remaining yeast with the 1/4 cup milk at room temperature. Add the rested milk, flour, and yeast mixture, and the vanilla and egg yolks. Mix until smooth, then add the flour and sugar. Once combined, add the butter and mix until smooth.
  • Scrape off the paddle attachment from the mixer, and replace it with the dough hook. Add flour 1/4 cup at a time on a medium low speed. Continue adding flour until the dough starts to pull away from the sides of the bowl. You want the dough to be soft, but not too sticky. If you touch dough it should be sticky, but not get stuck to your finger. Cover the dough with plastic wrap and let rest for 30 minutes.
  • Once the dough has risen, scrape down the sides of the bowl, and press on the dough to remove any bubble. Cover with plastic wrap and chill for 1 hour.
