White Borscht - Polish Easter Soup - Bialy Barszcz image

Steps:

  • 1. Place pre-cooked ham and kielbasa in a roaster. Add 2 quarts of water, cover and roast for 2 hours at 350 degrees. Reserve the pan juices as this will be the base for your soup broth. Refrigerate and then remove the fat from top afterwards. NOw, add the juices to a large pot and your addtl water to make 8 quarts. *If using an uncooked ham, do not add kielbasa util 1 hour before ham is done cooking.
  • 2. Add your peppercorns, garlic and bring to a simmer. In a medium bowl add your 1 cup of water and 1/2 flour, whisk till smooth and then add to your broth.
  • 3. Now, add your vineager to the level of taste your desire. Add more if you like it to be a really tart soup. (I loved it with the extra vinegar.) Simmer for awhile till the soup thickens and flavors meld. Probably about 1 hr or a little longer.
  • 4. Slice up Kielbasa 1/4 inch thick, cube ham and rye bread into bite sized pieces and the farmers cheese too. Coarsely chop your eggs. (The farmers cheese Chef Tad brought was extremely soft and so yummy too. It was unlike any farmers cheese I have had before. I will ask him this coming Sunday at our next class where he got it.)
  • 5. Combine all the chopped ingredients into a large bowl, so that it can be scooped out and placed in serving dishes.
  • 6. Now ladle your very hot broth over the top and add your desired amount of horseradish to your own bowl.
  • 7. Now, you are ready to eat a most delicious bowl of authentic polish soup. I just love the tartness in the broth and our chef that taught us how to make this soup brought homemade polish smoked kielbasa. It packed so much flavor and was so delicious added into this soup.

MAKE BROTH FOR SOUP
1 medium pre-cooked ham, smoked or plain
3 - 4 large smoked kielbasa or your favorite
2 qt water
MAKE SOUP
qt add addt'l quarts of water to make 8 quarts
2 tsp black peppercorns, whole
6 - 8 clove garlic, whole
1 c water
1/2 c flour
3/4-1 1/4 c cider vinegar (we used 1 1/4 cup)
ADD TO SOUP RIGHT BEFORE SERVING
1 medium loaf of jewish rye bread
1 medium block of farmers cheese
horseradish, grated fresh or from jar
9 medium eggs, hard boiled
salt & pepper to taste

Steps:

  • Bring water, kielbasa, and 2 whole cloves garlic to boil in a large pot; reduce heat to medium and simmer for 30 minutes. Remove sausage and pour liquid into a separate bowl. Cut sausage into cubes.
  • Melt butter over medium heat in the pot used to boil sausage; cook and stir leeks, onion, and minced garlic until vegetables are tender, about 5 minutes. Transfer vegetables to a blender; add about 1/2 cup reserved sausage water and blend until smooth, adding more water as needed.
  • Pour vegetable puree and remaining sausage water back into the original pot. Add bay leaves and bring borscht to a simmer over medium heat; remove and discard leaves. Whisk sour cream and flour in a bowl until smooth; gradually whisk into borscht until thickened. Stir dill and vinegar into soup and season with salt and black pepper.
  • Divide cubed sausage and chopped eggs into bowls; ladle borscht over sausage and egg.

CHRUSCIKI - POLISH ANGEL WING COOKIES

This delightful pastry was made by my Polish Grandmother every year for Christmas. Traditionally they were made for the last Thursday before Lent. They take a while to make but the time you put in to making these is well worth the reward!

Chrusciki - Polish Angel Wing Cookies image

Steps:

  • Using a stand mixer, whisk whole eggs, egg yolks, butter and salt until thick and lemon colored.
  • Slowly beat in the confectioner's sugar and brandy.
  • Change to the dough hook and slowly mix in the flour a 1/4 cup at a time until the dough forms and pulls away from the bowl.
  • Using the dough hook, knead the dough for 3-5 minutes. It should be thick like bread dough.
  • Keep the dough in the bowl covered with a damp towel to keep it from drying out.
  • Snip off a baseball sized piece of dough. On a floured surface, roll to 1/8 inch thick at the most!
  • Using a sharp knife cut the dough into 1 1/2 inch wide strips. Then cut the other way in a diagonal to make pieces of dough that are about 1 1/2 X 4 inches.
  • Next use your knife to cut a slit in the center of each piece.
  • To form the wing shape, take one pointy end and poke it through the slit. Very gently pull the end through the slit to form a bow shaped cookie.
  • In a heavy pot or deep skillet, heat the fat of choice (I like lard) to 350°F Use a thermometer!
  • Drop the cookies, 3 cookies at a time, into the fat. Drop 3 cookies at once not 1 at a time. The cookies will sink to the bottom at first then they will puff up and float a couple of seconds later. As soon as this happens use a couple of forks to turn them.
  • Immediately after you turn them use a deep fry strainer to remove them from the fat to drain on brown paper bags.
  • Dust the still hot cookies with confectioner's sugar and repeat, cooking 3 cookies at a time until finished.
  • Store in tightly covered, wax paper-lined tins.

This recipe was handed down from my Polish grandmother. I make it every weekend and a local social organization sells servings as a fund-raiser.

Steps:

  • In a large electric roaster (like Hamilton Beach) set on 175 degrees F.
  • ,melt 4 sticks butter.
  • Coarsely chop cabbage and onions and pack into roaster.
  • Roast for 2 hours, stirring every 30 minutes.
  • Continue roasting and prepare noodles (one bag at a time) according to package directions.
  • With each bag of prepared noodles, add 1/2 stick of butter, salt, celery salt and garlic powder to taste.
  • It takes about 1-1/2 hours to prepare and add all of the noodles.
  • Continue roasting for 1 additional hour.

15 lbs cabbage
5 lbs onions
3 -6 cups butter
4 (1 lb) bags extra-broad egg noodles
salt
celery salt
garlic powder

EASTER SOUP

Part of our Polish Easter tradition. The slightly sour soup broth is made from the kielbasa cooking water and is served with sliced sausage and the hard boiled Easter eggs. The original version uses kvass made by soaking oatmeal and rye bread in water, instead of the vinegar. We pass around horseradish, rye bread, kielbasa and eggs and everyone adds what they want to their dish of broth. You will either love it or hate it. Prep time does not include refrigeration.

  • Add kielbasa and water to a large pan, bring water to a boil, reduce heat and simmer 40 minutes.
  • Remove the sausage and refrigerate both sausage and cooking liquid overnight.
  • Next day, remove the fat from the liquid, add the vinegar and hoseradish.
  • Mix the flour and cream and add to the pan.
  • Season with salt and pepper and bring to a boil.
  • Reduce heat and simmer 10 minutes.
  • Allow kielbasa to return to room temperature or rewarm and slice it.
  • Serve hot broth with sliced kielbasa and eggs.

A traditional Polish recipe I learned from my mom who learned it from her mom. This is extreme comfort food and is great the next day for breakfast, warmed up in a fry pan with a couple eggs scrambled on top. Steps:

  • Get a large kettle of salt water boiling.
  • Peel the potatoes and then grate them in a large bowl. Use the "pokey" side of your hand grater so it creates a potato mash. Don't worry when the top of the potato mash turns a brownish color -- that's what happens when the potatoes are exposed to air.
  • Add egg and salt to the mash and mix. Salt is approximately 1 teaspoon -- not an exact measurement.
  • Start adding flour. I use a sifter to evenly add over the top of the mash. Mix in and add more. Continue doing this until the mix is too thick to stir, then start using your hands. Continue adding flour until it is like a thick dough.
  • Pat out on cutting board approximately 3/4" to 1" thick and cut into approxiamtely 1 1/2" wide strips.
  • Start frying bacon in a large pan.
  • Put several strips on a plate and set edge of plate on edge of kettle. With a butter knife, cut/break/slide a dumpling size chunk into the boiling salt water. Tap knife on edge of kettle to get it to fall off knife. If dough continues to stick to knife, just dip the knife in the water on occasion. Repeat until done. This goes much faster is you can get someone to help you with a second plate.
  • Cook dumplings approximately 35-45 minutes. Stir frequently to keep dumplings from sticking to the bottom of the pan. Water WILL get thick and starchy when nearly finished cooking. This is where you have to keep an eye in them because it's easy to burn at this point.
  • Finish cooking bacon until crisp.
  • Remove dumplings from heat and drain using a large slotted spoon/scoop and place a layer in a large bowl. Add a layer of bacon. Add another layer of dumplings and another layer of bacon. Drizzle a little bacon grease over several layers for added flavor. Repeat until all dumplings and bacon are used.
  • Serve hot. Sprinkle a little salt on top and add butter if you wish.
  • Enjoy!

  • In a large bowl blend together sour cream and mayonnaise. Add the chopped hard boiled eggs and finely chopped vegetables.
  • Stir in horseradish and season to your taste with the salt, confectioner's sugar and lemon juice or vinegar.

CREAMED EGGS ON TOAST

This is a great recipe at any time, but esp. can help use up hard boiled eggs after Easter. I used to request my mom to make this recipe anytime I came home from college and even when I was older and went home to visit for awhile. Now my son starts begging for it whenever we get close to Easter, or any other time he thinks he can get me to hardboil some eggs. The passive cooking time is to hardboil the eggs - that can be done the night before.

Steps:

  • To hardboil eggs, simmer on low (barely boiling) for about 20 min.
  • ,or bring to a boil, cover, turn off heat and let sit for about 20 min.
  • Cool (run cold water over cooked eggs), peel, then chop the eggs.
  • Melt the butter.
  • Stir in the flour and 1/4t salt.
