GRANDMA'S HASH BROWN CASSEROLE

This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

Grandma's Hash Brown Casserole image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

  • Mix all ingredients together in a large bowl.
  • Pour into a buttered 12 X 9 (I think that's the size, the card is faded) casserole pan.
  • Bake at 350 for 35-40 minute or until center is set.

Steps:

  • Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
  • Bake for 1 hour.

  • Preheat oven to 350 degrees.
  • Spray 9x13" baking pan with non-stick cooking spray. Set aside.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add eggs in one at a time, beating well after adding each one.
  • Beat in sour cream.
  • Add in muffin mix and milk, mix well.
  • Fold in the corn.
  • Pour mixture into prepared 9x13" pan. Bake uncovered for 40-45 minutes or until set and lightly brown.

Steps:

  • Blend cracker crumbs and melted butter thoroughly and press evenly on bottom and up the sides of a deep 9-inch pie pan, reserving 1/4 cup for top.
  • Saute green pepper and onion in melted butter until onion is transparent. Blend in flour and cook until bubbly. Add milk, all at once stirring constantly until thickened. Add corn, salt, sugar and eggs. Mix well. Pour into crust and top with reserved crumbs.
  • Bake for 35-45 minutes at 400 degrees or until knife inserted in center comes out clean.
  • NOTE: Grandma used about 2-3 cups of frozen corn from her garden instead of the two cans listed. Delish!!!

GRANDMA'S BAKED CORN

Holidays or family gatherings are never the same without grandma's baked corn. She is gone now, so I treasure this recipe. Prep time is apporoximate. I'm not sure of the servings. We were a family of 6, but no matter how much she made, we never had any left over.

Grandma's Baked Corn image

Steps:

  • Mix together all ingredients except crackers and pour into a Pyrex, or other glass baking dish.
  • Sprinkle with crushed cracker crumbs.
  • Bake at 350 for 1 hour or until firm.
  • Do not over cook or it will be dry.

1 1/2 quarts frozen fresh corn, thawed
2 large eggs, slightly beaten
3 tablespoons flour
1 1/2 cups milk
1/2 cup sugar
1 1/2 teaspoons salt
2 tablespoons butter
crushed cracker, for the top (I use Ritz or saltine)
