One of the only ways I like green beans! This comes from Japanese Home Style Cooking, a book given to me by a girl who lived with us. Prep time includes allowing the beans to stand in the soy sauce.

Green Beans with Peanut Dressing image

Steps:

  • String the beans and cook uncovered in plenty of boiling water until they turn bright green.
  • Do not overcook.
  • Drain, spread out to cool.
  • Cut diagonally into 1 inch (2cm) lengths.
  • Sprinkle half a teaspoon soy sauce over the beans and stand for 10 minutes.
  • Mix the beans into the dressing and serve.
  • DRESSING: Mix the peanut butter, sugar, soy sauce and dashi well.

1/2 lb green beans
1/2 teaspoon soy sauce
3 tablespoons sugar-free chunky peanut butter
1/2 tablespoon sugar
1/2 tablespoon soy sauce
1 tablespoon dashi (I use instant granules for this-about 1/4 teaspoon mixed in a tablespoon water)

  • In 3-quart saucepan, heat 6 cups water to boiling over high heat. Add beans to boiling water. Cook 4 to 6 minutes or until crisp-tender; drain. Rinse with cold water; drain. Cover; refrigerate while making dip.
  • In medium bowl, beat remaining ingredients except peanuts with wire whisk until smooth. Cover; refrigerate at least 30 minutes to blend flavors. Stir before serving. Garnish with peanuts. Serve beans with dip.

Steps:

  • Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the green beans and cook uncovered until tender, about 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the green beans are cold, drain well and cut into 2-inch pieces.
  • While the green beans are cooking, stir together the peanut butter, sugar, soy sauce, peanuts, and miso paste in a mixing bowl. Once the green beans have been cut, stir into the peanut sauce and serve.

Frisee with French Beans and Spicy Peanut Dressing image

Steps:

  • Thaw green beans in a colander and pat dry to remove excess water. Clean frisee and cut into bite sized pieces and set aside.
  • In a food processor, add the jalapeno, garlic, ginger and scallions. Process and add the sesame oil to form a paste. Transfer paste to a large bowl and whisk in cream of coconut. Whisk in peanut butter; gradually whisk in water until consistency is a smooth, thick sauce. Whisk in hoisin, soy sauce and cilantro. This recipe will make more dressing than you need for the salad; reserve extra dressing in an airtight container and store in the refrigerator for other uses.
  • Toss green beans and frisee and with enough dressing to coat. Garnish with roasted peanuts. Serve immediately.

Steps:

  • Saute 1 pound trimmed, halved green beans in peanut oil over high heat until browned, 5 to 6 minutes; remove. Add 1 tablespoon peanut oil, 2 minced garlic cloves, 2 teaspoons grated ginger, 6 dried chiles de arbol and 1/4 cup chopped peanuts; cook 30 seconds. Add the green beans, 3 chopped scallions and 1 teaspoon each sugar and Asian chili-garlic sauce; toss to coat. Season with salt and pepper.

Green Bean and Tofu Salad With Peanut Dressing image

Steps:

  • Bring a large saucepan of salted water to a boil. Meanwhile, stir the peanut butter, hoisin, lime juice, sugar and red-pepper flakes in a large bowl. Add 2 tablespoons boiling water from the saucepan to the peanut dressing and stir well. The dressing should be runny but still thick. If needed, stir in another tablespoon boiling water.
  • Add the green beans to the boiling water and cook until brighter in color and just tender, 2 to 3 minutes. Drain well, rinse under cold water until cool, then drain again. Transfer the green beans and tofu to the peanut dressing and stir gently until evenly coated. Season to taste with salt, then sprinkle with more red-pepper flakes. Serve immediately or refrigerate in an airtight container for up to 2 days.

  • Bring a large pot of salted water to boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water. Drain again and refrigerate.
  • In a food processor, pulse the peanuts until coarsely chopped. Reserve 1/3 cup of the peanuts for garnish. Continue pulsing the remaining peanuts until finely chopped.
  • Add the vinegar, ginger, soy sauce, sugar, oil, 2 tablespoons of hot water and 1 teaspoon of salt to the peanuts and blend until the dressing is almost smooth, scraping down the sides of the bowl several times.
  • Toss the green beans with the dressing. Sprinkle the reserved chopped peanuts over the top just before serving.

  • Wash the beans and remove the strings. Cook in a small amount of boiling water 10 to 12 minutes or until crisp-tender. Drain and set aside.
  • Combine 1/2 cup water, creamy peanut butter, ginger, and ground red pepper. Set aside.
  • Saute garlic in oil in a large skillet over medium heat, stirring constantly, until tender. Add reserved peanut butter mixture and salt; stir well.   • Bring a large pot of lightly salted water to a boil over high heat.
  • Add the green beans and cook until tender, about 5 minutes.
  • Drain and rinse briefly under cold running water.
  • Meanwhile, in a food processor, combine the peanut butter, brown sugar, soy sauce, lemon juice, garlic, and ginger.
  • Process until smooth.
  • With the machine on, add the hot water and mix until blended.

  • Bring a pot of water to a boil. Add green beans and simmer until beans are cooked through. Run tap water over the beans to cool down. Drain and set aside.
  • To cook chili oil (*see footnote), add chili flakes, peppercorn, star anise and sesame seeds into a small bowl. Place the bowl on a heat resistant mat (or cutting board). Heat oil in a wok (or a skillet) until hot, when the oil just starts to smoke. Turn off heat immediately. Carefully use a ladle to transfer oil to the bowl of mixed spices. The oil will bubble for a few seconds and cook the spices. When the the oil stops bubbling, immediately use a spoon to stir gently, to mix everything well.
  • Place the green beans on a plate and top with peanut sauce and garlic. Gradually add spicy oil, 1 teaspoon at a time, and mix everything well. Taste the salad to see whether it's spicy to your liking. You can add more chili oil if you prefer a spicier dish.
