KUGEL - ALMOND KUGEL BY CINDI image

Steps:

  • ALMOND KUGEL: Preheat oven to 325 degrees. Cook egg noodles, al dente, drain & set aside. Melt butter. In mixer: sour cream, eggs, almond, vanilla & sugar. Beat & slowly add melted butter. Beat on med-high for 5 minutes Fold noodles into egg mixture. Pour into well-greased round baking dish. Pour milk over egg mixture. Bake uncovered at 325 degrees for 45 minutes. Serve with sour cream & jam. (Note: Freezes well. Simply defrost & reheat until hot.) YUM!!!

1-bag of dumpling egg noodles
1-pint sour cream
4-eggs
3/4-TBSP almond extract
1-TBSP vanilla extract
3/4-C sugar
1-stick melted butter
1 C milk (not skim)
sour cream and/or jam

GRANDMA BUSCH'S NOODLE KUGEL

A kugel is a baked pudding or casserole, similar to a pie, most commonly made from egg noodles or potatoes. Sweet or savory, potato or noodle they are a wonderful side dish.

Grandma Busch's Noodle Kugel image

Steps:

  • 1. Preheat oven to 350 degrees. Parboil the noodles (five to seven minutes).
  • 2. In a very large bowl beat eggs until fluffy. Add the sugar gradually, then the cottage cheese, margarine or butter and vanilla. Stir in the drained noodles.
  • 3. Pour into a 9×13-inch pan. Bake for 1 1/2 hours, or until kugel is set.
  • 4. To make a Cherry Noodle Kugel top the noodle kugel with one can of Cherry Pie filling after the first hour of baking. I like to add a teaspoon of almond extract to my cherry pie filling before spreading over the kugel. Continue baking for 30 minutes.

1 lb wide egg noodles
8 large eggs
1 1/2 c sugar
2 lb cottage cheese, any type as long as it is full fat
1 1/2 stick butter, unsalted
2 tsp pure vanilla extract
dash(es) kosher salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and stir in 6 tablespoons sliced butter.
  • In a medium bowl beat egg yolks with sugar and cream cheese; stir into noodles and add sour cream, cottage cheese and salt. Beat egg whites until stiff and fold into mixture. Transfer mixture to prepared dish.
  • In a small bowl combine melted butter, 1/4 cup sugar, and graham cracker crumbs. Sprinkle over noodle mixture.
  • Bake in preheated oven for 1 hour.

Cauliflower-Leek Kugel with Almond-Herb Crust image

Steps:

  • Cook cauliflower in large pot of boiling salted water until tender, about 10 minutes. Drain; transfer to large bowl and mash coarsely with potato masher.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add leeks and sauté until tender and just beginning to color, about 5 minutes. Add leek mixture to cauliflower. Mix in matzo meal. Beat eggs, 1 tablespoon parsley, 1 tablespoon dill, salt, and pepper in small bowl to blend; stir into cauliflower mixture.
  • Brush 11x7-inch baking dish with 1 tablespoon oil. Spread cauliflower mixture evenly in prepared dish. Mix almonds, remaining 7 tablespoons parsley, 7 tablespoons dill, and 2 tablespoons oil in medium bowl to blend. Sprinkle evenly over kugel. (Can be made 8 hours ahead. Cover and chill.)
  • Preheat oven to 350°F. Bake kugel uncovered until set in center and beginning to brown on top, about 35 minutes. Let stand 10 minutes.

YERUSHALMI KUGEL

A specialty of Jerusalem, this dark, dense kugel is bound by eggs and caramel, and sharpened with loads of black pepper. In this recipe, adapted from the cookbook author Adeena Sussman, the edges crisp as it bakes, providing a crunchy contrast to the soft, springy noodles inside. Don't stray from the pan while the sugar is caramelizing, or it may burn in spots. Serve it in wedges, either warm or at room temperature. Leftover Yerushalmi kugel will keep for at least five days in the fridge, and reheats well in a 350-degree oven.

Steps:

  • Heat oven to 325 degrees. In a large pot of salted boiling water, cook noodles according to package instructions. Rinse and drain well. Return to pot and toss with 1 tablespoon oil to prevent sticking. Set aside.
  • In a heavy skillet, combine sugar and 1/2 cup oil over medium heat. Cook, stirring constantly, until the sugar melts and turns amber brown, but not burned, about 10 to 15 minutes.
  • Working quickly, pour the caramelized sugar over the cooked noodles and stir to combine. (Don't scrape the skillet.) The caramel will probably clump in places when it hits the noodles, and that is OK. It will melt as the kugel bakes. Let noodle mixture cool until warm, about 10 minutes.
  • Add eggs and 2 1/4 teaspoons each salt and pepper to noodles. Stir to incorporate.
  • In a 6-quart oven-safe pot or Dutch oven, heat the remaining 2 tablespoons of oil over medium-high until very hot, but not smoking. Scrape egg-noodle mixture into the pot and smooth it into an even layer.
  • Bake, uncovered, until kugel is dark golden and the top is slightly hardened and crusty, 1 hour 15 minutes to 1 1/2 hours.
  • Transfer pot to a rack to cool for 30 minutes. Run a butter knife or offset spatula along the edges to loosen the kugel. Invert kugel onto the rack, then invert it again onto a serving platter so that the top - and lighter side - of the kugel faces up. Serve while still warm or at room temperature.
