ORANGE PRALINE YAMS (TNT)
I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

Steps:
- 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct. PRALINE YAMS
I lost my recipe for a while and tried serveral others, but no comparison to this one. My dh favorite. A must a Thanksgiving.

- Preheat oven to 350. Drain yams.
- Place in ungreased 2 quart casserole dish.
- Mix togehter brown sugar, flour, and butter. Sprinkle on top of yams.
- Top with marshmellows.
- Bake at 350 for 35-40 minutes.

PRALINE YAMS
I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

- Heat oven to 350 degrees.
- Place drained yams in an ungreased 1/2 quart casserole or baking dish.
- In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
- Bake at 350 for 35 to 40 minutes or until bubbly.
ORANGE PRALINES
Pralines with just a subtle hint of orange -a different twist to a timeless classic. I lay a piece of waxed paper on top of a kitchen towel on my table and drop the pralines by the spoonful on top of the waxed paper. I find it's easier to pick them up this way and less likely to break.

Steps:
- Preheat oven to 350 degrees.
- Spread pecans on baking sheet and lightly toast for about 7-10 minutes.
- Remove from oven and set aside.
- In large saucepan combine sugar, half and half, salt, butter and corn syrup.
- Cook over medium heat stirring constantly until mixture reaches 235 degrees on candy thermometer.
- Add orange juice and zest and cook until it again reaches 235 degrees.
- Remove from heat, add vanilla and stir for 1 minute.
- Add pecans and stir briefly.
- Working rather quickly drop by spoonfuls onto waxed paper.
- Store in covered container.

Steps:
- Cook yams until tender.
- Peel and quarter yams and mash in a large bowl.
- Beat in butter, brown sugar,salt and eggs.
- Turn into a 1-qt casserole dish
- Arrange pecan halves in a pattern on top of casserole.
- Sprinkle top with 1/4 cuo dark brown sugar.
- Drizzle top with 1/4 C melted butter.
- Bake at 375* for 20 minute.
- ********************************.
- Combine sugar, cornstarch, salt, orange peel, orange juice , and lemon juice in a sauce pan.
- Bring to a boil over medium heat.
- Cook until thickened, stirring constantly.
- Remove from heat.
- Stir in butter and bitters.
- Serve warm orange sauce over casserole.

- If using fresh yams, wash well, cut into thirds and place in a large pot of cold water. Bring to boil, reduce to simmer and cook until soft, about 35-40 minutes, fork should go right through. Allow to cool for 10 minutes until you can handle them, then slice through skins and peel back discarding skins. Or save skins for your doggy, they'll thank you!
- While yams are boiling, prepare the rest of your ingredients. Zest orange, set aside. Squeeze orange to yield ⅔ cup (might be necessary to use two oranges, or make up difference with fresh orange juice (not concentrate or the fake stuff, don't do it, don't even be tempted!)
- Add whisky or brandy, set aside. If you prefer not to use in the dish, increase your orange juice by 2.5 Tablespoons. Melt 4 tablespoons of butter, set aside. Measure spices (salt, pepper, ginger) into a small dish, set aside.
- Measure light brown sugar (dark ok), separate egg yolks (reserve) from the whites, throw away (or use in another dish) and set aside.
