Pumpernickel/Rye Bread Stuffing With Apple, Walnuts, and Raisins image

Steps:

  • In a big skillet, melt butter over medium heat; add in the onion; cook, stirring often, until softened, about 3 minutes.
  • Add in apples and celery; cook/stir until the onions are golden brown, about 10 minutes.
  • Stir in walnuts and raisins.
  • Transfer the onion-apple mixture to a bowl; add in pumpernickel and rye bread cubes; toss, sprinkling with apple cider.
  • Gradually stir in about ½ cup broth, until stuffing is evenly moistened but not soggy.
  • Season with salt and pepper to taste.
  • Transfer to a lightly buttered casserole dish, sprinkle with ½ cup broth, cover, and bake in a preheated 350° oven for 30 minutes (uncover the last 15 minutes if you want a crusty-topped stuffing).

3 granny smith apples, peeled, cored, and cut into 1/2-inch cubes
2 medium celery ribs, chopped
1 1/2 cups walnuts, toasted and coarsely chopped
1 cup golden raisin
1/2 lb pumpernickel bread, cut into 1/2-inch cubes and dried overnight
1/2 lb rye bread, cut into 1/2 inch cubes and dried overnight
1/2 cup apple cider
1/2-1 cup turkey broth or 1/2-1 cup chicken broth, as needed
salt
fresh ground black pepper

Apple, Raisin and Walnut Bread image

Steps:

  • In a large bowl, mix whole wheat flour, rye flour, yeast, salt and 2 cups bread flour. In a small saucepan, heat apple juice, yogurt and butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining bread flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead in dried apples, raisins and walnuts until dough is smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide in half. Shape into round loaves. Place on greased baking sheets. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes., Preheat oven to 350°. Using a sharp knife, make 3 shallow slashes on top of each loaf. If desired, brush loaves with egg. Bake until golden brown, 35-40 minutes. Remove from pans to wire racks to cool.

Raisin Pumpernickel Bread image

Steps:

  • Stir together the lukewarm water and molasses in a large mixing bowl.
  • Sprinkle in the yeast and stir to dissolve.
  • Let stand for 10 minutes, or until slightly foamy.
  • Stir in instant coffee, salt and rye flour.
  • Sprinkle in the cocoa and stir well to combine.
  • Add whole-wheat flour and 1 cup of the bread flour, or enough to make a sticky dough.
  • Turn the bread out onto a lightly floured work surface and let it rest.
  • Wash and dry the bowl.
  • Sprinkle additional flour over the dough and begin to knead.
  • Continue until most or all of the remaining bread flour is incorporated and you have a smooth elastic ball.
  • (Breads with rye flour will always be slightly sticky.) Pour the vegetable oil into the mixing bowl, turn the ball of dough to coat well, cover bowl with a towel, and set aside to rise until dough is tripled in bulk, 3 to 4 hours.
  • Lightly flour the work surface and turn the dough out onto it.
  • Flatten it into a large rectangle and sprinkle with the raisins.
  • Roll up the dough and knead it, to distribute the raisins and let rise until doubled.
  • Sprinkle a large baking sheet with 3 to 4 tablespoons cornmeal.
  • Turn the dough out,cut it into 3 pieces, and shape each piece into a small round loaf.
  • Set loaves on the baking sheet, leaving as much room as possible between them, cover, and let rise until doubled.
  • Preheat oven to 400*.
  • Beat egg white together with 1 tbls.
  • cold water in a small bowl.
  • When the loaves have risen sufficiently, brush the tops with the egg white mixture.
  • Bake loaves on the middle rack of the oven for 35 to 45 minutes, or until they are dark brown and sound hollow when bottoms are rapped.
  • Cool completely on racks before cutting or wrapping.
  • Makes 3 loaves.

  • Place ingredients into the pan of the bread machine in the order suggested by the manufacturer. Select Whole Wheat cycle, and Start.

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 350°F.
  • Spread bread cubes in 2 large shallow baking pans and bake, stirring occasionally and switching position of pans halfway through baking, until dry, 20 to 25 minutes total. Transfer bread to a large bowl. 3While bread is drying in oven, cook onions in 1/2 stick butter in a 12-inch heavy skillet over moderate heat, stirring occasionally, until golden, about 20 minutes, then add garlic and cook, stirring occasionally, 1 minute. Add onion mixture to bread, reserving skillet. Add turnips, broth, and 2 tablespoons butter to skillet, then simmer, covered, until tender, 5 to 8 minutes.
  • Increase oven temperature to 450°F and butter a 13- by 9-inch baking dish (3-quart capacity).
