- Pour 4 inches canola oil into an 8-quart Dutch oven and bring to 350˚ over medium-high heat.
- While the oil comes to temperature, peel the onions and slice into 1/2-inch-thick rings.
- In a large bowl, combine the flour, kosher salt, garlic powder and black pepper. Whisk in the ale until the ingredients are combined. The batter should be thick but slightly loose.
- Place a wire rack on a sheet pan. Working in batches, dip the onion rings into the batter. Drain off any excess batter back into the bowl, then slowly lower the onion rings into the hot oil. Cook, flipping the onions every 30 seconds, until golden brown, 2 to 3 minutes. Using a spider, transfer the onions to the rack and lightly season with sea salt.
RED ALE ONION RINGS
When it comes to salty fried snacks, onion rings seem to always play second fiddle to the french fries. But there's something so old-school Americana about a perfectly battered onion ring that I can rarely pass up. The toasted caramel notes from the red ale really make this batter special. Try these rings with my Jerk Ketchup, and they might just become your favorite snack.

- Pour 4 inches (10 centimeters) oil into an 8-quart (8 liter) Dutch oven and bring to 350 degrees F (177 degrees C) over medium-high heat.
- While the oil comes to temperature, peel the onions and slice into rings 1/2 inch (12 millimeter) thick.
- In a large bowl, combine the flour, salt, garlic powder, and black pepper. Whisk in the ale until the ingredients are combined. The batter should be thick but slightly loose.
- Place a wire rack in a sheet pan. Working in batches, dip the rings into the batter. Drain off any excess batter back into the bowl, then slowly lower the onions into the hot oil. Cook, flipping the onions every 30 seconds, until golden brown, 2 to 3 minutes. Using a spider, transfer the onions to the wire rack and lightly season with sea salt.
- In a nonreactive medium bowl, combine the ketchup, lime juice, brown sugar, oregano, thyme, garlic powder, onion powder, allspice, cayenne, pepper flakes, and salt and mix until incorporated. Use immediately or transfer the ketchup to an airtight container and refrigerate for up to 4 days.

- Combine onion rings, buttermilk and 1 teaspoon ground cumin in large bowl. Let soak 1 hour, stirring occasionally.
- Pour oil into large saucepan to depth of 1 1/2 inches; heat to 375°F. Mix flour, cornmeal, salt, pepper and remaining 1/2 teaspoon cumin in cake pan. Drain onion rings. Working in batches, add a few onion rings to flour mixture and turn to coat. Add to oil and fry until golden brown, about 45 seconds. Drain on paper towels. Sprinkle with salt and pepper and serve.

- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

- Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.
- In a wide shallow bowl, whisk together flour, cornmeal, cornstarch and cayenne. In a second bowl, beat egg and buttermilk. Separate onion slices into rings.
- Working in batches, lightly toss the rings in the flour mixture, then dip into the buttermilk mixture. Allow most of the liquid to drip off, then toss again in the flour mixture. Shake off as much flour as possible and place the rings into the hot oil.
- Fry for 2 to 3 minutes or until golden brown, moving the rings around a bit in the oil to keep them separated.
- Put the onion rings on a plate or bowl lined with paper towel and salt. Repeat until the onions are done.

- Preheat vegetable oil to 350 degrees. Add enough oil to fill the cooking container to 3 inches deep.
- Peel onions, and cut into ½ to ¾ inch rings. Separate onions into rings. Take the center rings and save for another recipe. You can chop those small rings for chopped onions in another recipe.
- Set up a breading station by placing three small bowls or dishes into a row. In the first shallow container add flour, seasoned salt, and black pepper, stir to combine. In the second dish combine the eggs with 1 cup of milk. Whisk the eggs and the milk together until they are well-combined. Finally, in the third container, add the panko breadcrumbs.
- First, dip the rings into the flour, and allow them to rest a couple of minutes on a wire rack. Then dip the floured onion ring into the egg wash mixture. Shake the onion ring gently to remove the excess egg wash, then place into the panko breadcrumbs. Coat the panko breadcrumbs over the onion ring well. Place the onion ring back onto a wire rack and allow it to rest a minute or two before cooking. This will help keep the coating in place.
