ROAST VEAL IN TUNA SAUCE - FROM THE MADEIRA ISLANDS, PORTUGAL

I'm posting this recipe for ZWT 5, it comes from "Dine Around The World", a lovely cookbook a friend gave me many years ago. It states "This typical summer dish comes from the exquisite cuisine of Madeira." Madeira is a Portuguese archipelago in the mid Atlantic Ocean . It is a popular year-round resort, noted for its Madeira wine, flowers, and embroidery artisans. Please note that this dish requires overnight chilling in the fridge after assembly.

Roast Veal in Tuna Sauce - from the Madeira Islands, Portugal image

Steps:

  • Bind veal roast into roll, if necessary, and place in casserole.
  • Mix lemon juice, water, anchovy paste, salt and pepper, and pour over meat.
  • Add bay leaves, onion slices, and juice from garlic cloves, and roast in oven at 180C/350F for two hours. Leave to cool in liquid.
  • Sauce:.
  • Squash tuna with fork, mix with chopped anchovies, chopped capers and lemon juice, season with salt and pepper, and fold in mayonnaise and whipped cream.
  • Remove veal from liquid, dry with absorbent paper, cut in thin slices.
  • Arrange on platter and pour sauce over meat.
  • Place in refrigerator overnight.
  • Garnish with olives, lemon slices and parsley.
  • Mixed salad, french bread, and a well-chilled rose wine are nice accompaniments.

1 1/2 kg veal roast (from leg)
3 tablespoons lemon juice
1 cup water
1 tablespoon anchovy paste
1 teaspoon salt
1/2 teaspoon pepper
2 bay leaves
1/2 sliced onion
2 garlic cloves
170 g tuna, canned
1 tablespoon chopped anchovy
1 tablespoon chopped capers
2 tablespoons lemon juice
salt and pepper
3 tablespoons mayonnaise
3 tablespoons cream, whipped
chopped stuffed olives
lemon slice
parsley

ROAST VEAL WITH CREAM SAUCE (KALBSBRATEN MIT SAHNESOSSE)

This recipe was posted in reply to a message board request. It is from the "Choice Common Markets" cookbook, West Germany section (1973). This is a wonderful dish, and appeals even to those who are not fond of "German food". *Cooking time depends on the weight of the veal. I posted it as "25 minutes" (meaning about 25 minutes per pound of veal), because Zaar wouldn't let the post go through without a specific "cooking time".

Roast Veal with Cream Sauce (Kalbsbraten mit Sahnesosse) image

Steps:

  • Weigh the joint and calculate the cooking time.
  • Allow 25 minutes per pound plus an extra 25 minutes if the meat is on the bone; 30 minutes per pound plus 30 extra minutes if the joint is boned and rolled.
  • Season veal well with salt, pepper, and paprika.
  • Fry (brown) the meat briskly in butter.
  • Place the meat in a roasting pan, add a little water (about 1/2 cup) together with the onion and roast in a hot oven (425°F, 220°C, GM 7) for the required time.
  • When the meat is cooked, remove from the pan and keep warm.
  • Blend cornflour (corn starch) with a little water and add to the meat juices in the pan along with the sour cream.
  • Serve the meat whole or sliced with the sauce poured over it.
  • This roast is frequently served with fried mushrooms as a side dish.

1 teaspoon cornflour, approx (corn starch)
2 -3 tablespoons water, about
1/4 pint sour cream (4 ounces)

ROASTED VEAL CHOPS WITH MADEIRA AND PARSNIPS

A favourite recipe of mine from LCBO Food and Drink, Autumn 2000. The Madeira brings out the sweetness of the parsnips and complements the mildly flavoured veal. This recipe is easily reduced to make a meal for 2 or 4 people. Serve with a green vegetable or salad. Veal chops are usually large enough to consider one portion per person. With other accompaniments, this course is sensible and does not allow for discomfort from overeating. I served this recipe as a main course, Christmas dinner, and it was a welcome change from the traditional turkey, ham, etc. The first two courses were lime sorbet and a sherried beef broth with sauteed scallion stems. Dessert was a mixture of berries and flavoured whipped cream followed by a tray of mixed cheeses. Selected wines could be a fine old Madeira; Valpolicella; or your favourite Chardonnay.

Roasted Veal Chops with Madeira and Parsnips image

Steps:

  • Preheat over to 425 degrees F (220 C).
  • Peel, top and tail the parsnips.
  • If they are large, cut into quarters; medium-sized parsnips can be cut in half.
  • Place in a saucepan of cold salted water.
  • Bring to a boil, then simmer 5 minutes.
  • Drain and refresh with cold water.
  • Toss drained, dried parsnips with 1/4 cup (50 mL) of Madeira, 2 Tbsp (25 mL) olive oil and sugar (or sugar substitute).
  • Put in bottom of a roasting pan.
  • Place in oven and roast for 10 minutes.
  • Pat veal chops dry and season with salt and pepper.
  • Set aside.
  • Meanwhile, in a large frying pan, melt half the butter with remaining olive oil.
  • Brown 3 chops well, about 2 minutes per side.
  • Repeat with remaining butter and chops.
  • Discard any fat from the pan and add remaining Madeira.
  • Be careful, it may catch alight.
  • Reduce by half, stirring to loosen any brown bits; (deglazing the pan).
  • Add chops and coat with glaze.
  • Remove the roasting pan from the oven.
  • Turn parsnips.
  • Place glazed veal chops on top.
  • Pour remaining glaze over veal chops and return to the oven.
  • Roast 12 to 15 minutes more until veal chops are cooked and the parsnips soft.

12 small parsnips (or 6 large)
3/4 cup madeira wine, divided
3 tablespoons olive oil, divided
2 tablespoons granulated sugar (or sugar substitute)
6 veal chops
salt & freshly ground black pepper
1/4 cup butter
