AIR FRYER SALT AND VINEGAR CHICKPEAS
This addictive little snack is sure to disappear quickly, so you might want to make two batches! These are best served immediately.

Steps:
- Combine chickpeas and vinegar in a small saucepan and bring to a simmer. Remove from heat. Let stand for 30 minutes.
- Drain chickpeas, removing any loose skins.
- Preheat an air fryer to 390 degrees F (198 degrees C). Spread chickpeas evenly in the basket. Cook until dried out, about 4 minutes.
- Transfer chickpeas into a heat-proof bowl and drizzle with oil and sea salt. Toss to coat. Return chickpeas to the air fryer and cook, shaking basket every 2 to 3 minutes, until lightly browned, about 8 minutes. Serve immediately.

- Drain and dry chickpeas very well. Dry them up using some paper towels and leave them in a colander until they have dried as much as possible (OR you can spread them on a large baking sheet lined with paper towel for a while.)
- Spread the chickpeas well on a bare baking sheet (do not line the baking sheet with parchment or foil.) Drizzle a generous amount of extra virgin olive oil and season with kosher salt. Toss chickpeas and make sure they are well-coated with the olive oil. Spread them out well on the sheet.
- Roast in heated oven anywhere from 20 to 35 minutes, shaking the pan every 10 minutes or so for even cooking. When chickpeas turn a deeper golden brown and the exterior is nice and crispy, they are ready.

- Preheat the oven to 425°F (218°C) Place the drained and rinsed chickpeas on a clean kitchen towel (or paper towels) and pat dry. It is very important for the chickpeas to be as dry as possible before they hit the oven, otherwise they won't crisp up properly.
- Place the chickpeas on a half sheet pan and drizzle them with the olive oil. Add the salt and freshly ground pepper, and toss until evenly distributed.
- Roast for 15 minutes. Remove from the oven, and toss the chickpeas with a spatula or wooden spoon. Roast the chickpeas for an additional 10 minutes or until they are golden brown and crispy (but not too dry).
- Drizzle the chickpeas with the vinegar, toss, and pop them back into the oven for another 30 seconds or so. Remove from the oven and allow to cool slightly before eating (the salt and vinegar flavor will be more pronounced when they are lukewarm, rather than piping hot out of the oven).
