SHIRLEY'S SHEEP HERDER CAKE

I have no idea why the title for this cake because I doubt many sheep herders had access to the ingredients. But, the church lady from whom I got the recipe, called it this, so I do too.

Shirley's Sheep Herder Cake image

Steps:

  • Preheat oven to 325º F.
  • Generously coat a standard 10″ bundt pan with non-stick baking spray (I use Baker's Joy). Set aside.
  • Combine all ingredients in a large mixing bowl. Beat with an electric hand mixer for several minutes or until the dry ingredients have been completely incorporated and the mixture is smooth. Transfer mixture to the prepared bundt pan and smooth top of batter with a rubber spatula or spoon.
  • Bake for 45 minutes or until toothpick or wooden skewer comes out clean when inserted near center of cake. Remove from oven and allow to cool in the pan for 10 to 15 minutes.
  • Run a knife along the outside edge between the cake and pan and then carefully invert bundt pan on to a serving platter, cake plate or cake pedestal.
  • Insert 3" strips of parchment or waxed paper around base of cake to catch the glaze drips.
  • When the cake has cooled completely, prepare the glaze. Whisk together powdered sugar, cocoa powder, and salt in a medium mixing bowl.
  • Whisk in Kahlua and milk or heavy cream until well combined. Add additional milk or cream if you need to think the glaze further. Drizzle over the cake, allowing glaze to drip gently down sides.
  • Remove strips of parchment or waxed paper and serve.

- 1 (16.5 ounce) box chocolate cake mix
- 1 (3.9 ounce) box chocolate fudge instant pudding
- 4 large eggs
- 3/4 cup water
- 1 cup vegetable oil
- 1/4 cup kahlua
- 1/4 cup vodka
GLAZE
- 1 cup powdered sugar
- 1 tablespoon cocoa powder
- 1/4 teaspoon salt
- 2 tablespoons kahlua
- 1 tablespoon milk or heavy cream, plus additional as needed

SHEEPHERDER'S BREAD

A wonderful, fine textured bread baked in a iron Dutch oven. this is an old Basque sheep herder's recipe. originally it was baked over an open fire, out on the range using hot coals on top and bottom of Dutch oven. it is enormous, but well worth the time and labor of love to make it.

Sheepherder's Bread image

Steps:

  • In a bowl, combine water, butter, sugar and salt. Stir until butter melts and cool to 110 to 115 degrees. Stir in yeast, cover and set in warm place until bubbly, about 15 minutes.
  • *Add 5 C flour and beat to form thick batter. Stir in enough of remaining flour (about 3 1/2 cups) to form stiff dough. Turn out on floured board and knead until smooth and elastic (about 10 minutes), adding flour as needed to prevent sticking. Turn dough into greased bowl, cover and let rise in warm place until doubled, about 1 1/2 hours. Punch down and knead to form smooth ball. I knead the dough 3 times.
  • Grease inside of dutch oven and inside of lid with salad oil. Place dough in dutch oven and cover with lid to let rise for the third time. Let raise in warm place until dough pushes up lid about 1/2 inch (watch closely).
  • Bake covered with lid in 375 degree oven for 12 minutes, carefully remove lid and bake for another 30 to 35 minutes, or until loaf is golden brown and sounds hollow when tapped. Remove from oven and turn out on rack to cool.

Miss Shirley's Eastern Shore Crab Cakes image

Steps:

  • In a medium-size bowl, thoroughly combine the eggs, Worcestershire sauce, lemon juice crab seasoning, parsley, mayonnaise and mustards.
  • Place the crabmeat in a large bowl gently fold in the breadcrumbs and the egg mixture so as not to break up the lumps. Shape into 12 slightly flattened balls and chill for at least 1 hour.
  • To fry the crab cakes:
  • Pour oil into the skillet to a depth of about 1 1/2 inches. Heat the oil to 370° and fry the crab cakes, a couple at a time, until golden brown, 4 to 5 minutes per side. Remove with a slotted spatula to paper towels to drain.
  • To broil:
  • Place crab cakes under a preheated broiler, turning to cook evenly, until nicely browned, 4 to 5 minutes per side.
  • Serve with soda crackers and tartar sauce.

2 eggs

SHEPHERD'S PIE

Shepherds are in the business of herding sheep, which makes lamb the most obvious choice for this pie, but ground beef is a tasty addition. The combination of ground lamb and ground beef is earthy and robust, and keeps lamb's gaminess in check. Ground lamb tends to be fatty, so this recipe uses lean ground beef to compensate. If you prefer all beef, be sure to use something with a little more fat. And if you prefer all lamb, you may want to skim off some of the extra fat after browning the meat.

Steps:

  • In a large pot, bring a gallon of water and 2 tablespoons salt to a boil over high heat. Add potatoes to boiling water and boil for about 15 to 20 minutes, until soft; a knife should go in with almost no resistance.
  • In a small saucepan or a microwave oven, heat 6 tablespoons of the butter and milk together until butter melts. Drain potatoes well and return to pot. Using a masher or a ricer, mash hot potatoes until smooth. Mix in the hot butter mixture, just until blended. Stir in the Cheddar. Season to taste with salt and pepper. Cover and set aside.
  • Heat the oven to 375 degrees. Melt the remaining 2 tablespoons of the butter in a large oven-safe skillet with high sides or an enameled cast-iron braiser (at least 2 1/2-quart capacity) over medium heat. Add the onion, carrot, garlic, thyme and rosemary and cook, stirring often with a wooden spoon, until the onions are translucent and the carrots are just tender, about 10 minutes. Add the beef and the lamb and cook, breaking the meat up with a spoon, until it is no longer pink. (At this point, you can drain off some of the excess fat if you like.) Season the mixture to taste with salt and pepper.
  • Add the tomato paste and stir, cooking until it is well combined, another 2 to 3 minutes. Sprinkle the flour over the mixture and cook for 1 minute. Add the beef stock and cook, stirring, until the liquid has thickened slightly. Stir in the parsley and remove the thyme and rosemary stems. Season to taste with salt and pepper.
  • Top the meat mixture with dollops of the mashed potatoes then spread them out over the top. (Or transfer the meat mixture to a 3-quart casserole dish and spread into an even layer, and top with potatoes.) Transfer to the oven and, if the mixture is at the top edges of your pan, set a foil-lined baking sheet underneath the pan to catch any drips. Bake the pie until the potatoes have begun to brown and the edges are bubbling, about 30 minutes. Let stand at room temperature for 15 minutes before serving.
