MINI CROSTINI WITH GOAT'S CHEESE & ARTICHOKES

Bite-sized pieces of crispy toast topped with cheese, artichokes and pesto make attractive canapés for a party or buffet spread

Mini crostini with goat's cheese & artichokes image

Steps:

  • Cut the crusts off the bread. Cut diagonally in half, then cut each piece into 2 triangles. Press them into a mini muffin tin and brush with a little oil. Bake at 200C/180C fan/gas 6 for 7 mins or until golden. Leave to cool completely. Top each one with a piece of goat's cheese, half an artichoke heart and 1 tsp pesto. Scatter over some rocket and serve.

Suzette Sauce image

Steps:

  • Bring orange juice, sugar, and Grand Marnier to a simmer in a large skillet over medium heat, stirring until sugar is melted. Add butter a piece at a time, whisking until incorporated before adding more; stir in salt. Continue to gently simmer, swirling sauce often, until slightly thickened, about 5 minutes. Serve warm.

2/3 cup fresh orange juice
2/3 cup sugar
2 tablespoons Grand Marnier or other orange liqueur
6 tablespoons chilled unsalted butter, cut into pieces
1/4 teaspoon kosher salt

  • Combine artichoke hearts, mayo, onion, and 1/3 of cheese. Combine until well mixed.
  • Spread mixture on untoasted sides of bread cutouts. Sprinkle lightly with remaining cheese.
