SWISS MACARONI AND CHEESE

Whenever we visited my husband's good friend, his wife made this dish. I was too shy to ask for the recipe, so I came up with this one. It is very creamy and rich, with a mild Swiss cheese flavor.

Swiss Macaroni and Cheese image

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a small saucepan, saute onion in butter until tender. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Add the cheese, salt and pepper. Drain macaroni. Add to cheese mixture; toss gently to coat.

Swiss Mac N Cheese image

Steps:

  • 1. Grate your cheese and set aside.
  • 2. Cook your pasta, when it is about 1/2 way done get another pot melt your butter on low heat, when it is all melted put your 1/2 cup of flour in all at once and start whisking it with the flour to make a blonde rue. Cook for a couple minutes, then start whisking in your milk until it is all encorporated well. By this time your pasta should be done, drain it well and set aside for a sec. Now you want to season the mixture with the salt and pepper, then add your cheese, whisking to a creamy consistancy. Turn off heat, add pasta and stir until pasta is covered. Transfer to a greased casserole dish and Bake for 30 minutes, then I turn on broiler for a couple minutes to slightly brown it on top.

2 lb elbow macaroni, cooked
1 stick of butter
1/2 c flour
1 1/2 lb swiss cheese, grated
3 c milk
salt and pepper to taste

Älplermagronen (Swiss Alpine Macaroni) image

Steps:

  • 1. Preheat oven to 375 degrees F. Lightly grease large casserole dish.
  • 2. Bring large pot of salted water to a boil.
  • 3. In a large frying pan, melt butter over medium low heat. Add the onions and cook, stirring occasionally, until golden brown.
  • 4. Once water comes to a boil, add cubed potatoes. As They begin to soften, about 5 minutes, add pasta. Cook, stirring occasionally, until potatoes are tender and pasta is just tender, about 7 minutes. Drain and gently rinse with cold water.
  • 5. In a small bowl, season with salt and pepper cream.
  • 6. Add 1/3 of pasta and potatoes to the bottom of prepared dish. Evenly cover with 1/2 of grated cheese.
  • 7. Top with another 1/3 of pasta and potatoes, then top with remaining cheese, then remaining pasta and potatoes.
  • 8. Pour the cream over the layers. Evenly cover with caramelized onions.
  • 9. Cover and bake in preheated oven until heated through and cheese is melted, 10-15 minutes.
  • 10. Serve hot over applesauce.

4 Tbsp butter
2 large onions, thinly sliced
2 large potatoes, peeled and cut into 1/2 - 1 inch cubes
1 lb macaroni pasta, or pasta of your choice
1/2 c cream
salt and pepper to taste
1 c grated, gruyere or emmentaler cheese

Asparagus and Swiss Macaroni and Cheese image

Steps:

  • Preheat the oven to 350 degrees F. Move a rack to the middle of the oven. Coat a 9-by-13-inch baking dish with nonstick cooking spray.
  • In a large pot set over high heat bring 1 gallon of water with 2 tablespoons kosher salt to a boil. Add the penne and cook 2 minutes less than the package directions, stirring occasionally. The pasta will be slightly underdone. Use a measuring cup or ladle to remove 1/3 cup pasta water and set aside. Drain the pasta into a colander. Return the pasta to the pot and set aside.
  • Melt 4 tablespoons of the butter in a large skillet set over medium heat. Add the flour and cook for 3 to 4 minutes, whisking constantly. Pour in the milk, whisking constantly until the mixture starts to thicken like heavy cream and then becomes almost pudding-like, 2 to 3 minutes. Add the shredded cheese and whisk until smooth, the sauce will be very thick. Add the nutmeg and season with some salt and pepper.
  • Combine the asparagus, pasta, reserved 1/3 cup pasta water and cheese sauce and toss well. Season with salt and pepper, then transfer to the prepared baking dish and top with a layer of the cheese slices. Cut the remaining 2 tablespoons butter into 1-inch cubes. Sprinkle the panko over the cheese slices, and top with the butter cubes. Bake until the top is golden brown and crisp, 20 to 25 minutes. Remove from the oven and cool for 10 minutes before serving.

Swiss - Alpine Macaroni image

Steps:

  • Place the potatoes in a large pot and fill with enough water to cover them.
  • Bring to a boil and cook until tender.
  • Drain and cool slightly, then remove the peels, and slice into 1/4 inch thick slices.
  • Preheat the oven to 400 degrees F and lightly grease a 9x9 inch baking pan.
  • Bring a large pot of lightly salted water to a boil and add the macaroni and cook until barely tender, about 6 minutes, then drain and set aside.
  • Melt the butter in a large skillet over medium-high heat and add the onion and cook and stir until onion starts to turn translucent.
  • Next stir in the garlic, and cook for a few more minutes then remove from the heat and set aside.
  • Layer the macaroni, onions and potatoes into the prepared baking dish and season with salt and pepper.
  • Sprinkle the shredded Gruyere cheese over the top, and drizzle cream evenly over the entire dish and bake in the preheated oven until the top is golden brown, 15 to 20 minutes.

Steps:

  • Heat oven to 350*F.
  • Lightly butter a large ovenproof gratin dish.
  • Cook the macaroni and potatoes in boiling salted water for 10 minutes, until just tender.
  • Dry fry the bacon in a large non stick pan until lightly golden.
  • Pour in the cream and season with nutmeg and fresh ground pepper.
  • Drain the macaroni and potatoes well and stir them into the bacon and cream.
  • Spoon half into the prepared dish, sprinkle with half the parmesan, then spoon remaining mixture on top, finishing off with remaining parmesan.
  • Bake for 10 to 15 minutes until golden and bubbling.
  • Meanwhile melt the butter ina frying pan, and cook sliced onion for 5 to 6 minutes til golden.
  • Serve the baked macaroni with the onion slices scattered on the top.

Shannon's Smoky Macaroni and Cheese image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a pot with lightly-salted water and bring to a boil. Stir the macaroni into the water and return to a boil. Cook and occasionally stir until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
  • Melt the butter in a large pot over medium heat. Add the flour to the melted butter and whisk continually for 1 to 2 minutes to make a roux. Whisk 2 cups of the milk into the roux until smooth and then add the remaining milk. Raise the heat to medium-high and continue cooking and stirring until thickened, but not boiling.   • Preheat oven to 325°F
  • Lightly grease a 12 × 8-inch baking pan; set aside.
  • Cook pasta according to package directions, omitting salt.
  • Drain in colander; set aside.
