VANILLA SPICE OATMEAL

Vanilla Spice Oatmeal image

Steps:

  • In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.
  • In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.
  • When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.
  • Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

BROWN BUTTER STEEL-CUT OATMEAL

Brown Butter Steel-Cut Oatmeal image

Steps:

  • Select Sauté on the Instant Pot and melt the butter. Add the oats and sauté, stirring often, for about 5 minutes, until aromatic and lightly toasted. Add the water and salt and stir to combine, making sure all of the oats are submerged in the liquid.
  • Secure the lid and set the Pressure Release to Sealing. Press the Cancel button to reset the cooking program, then select the Porridge settingand set the cooking time for 12 minutes at high pressure.
  • Let the pressure release naturally for at least 10 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot and stir the oatmeal to incorporate any extra liquid.
  • Ladle the oatmeal into bowls and serve with brown sugar and cream.
  • Variations
  • Apple cinnamon: Stir in 1 apple, chopped, and 1/2 teaspoon cinnamon with the water.
  • Pumpkin spice: Stir in 1 cup pumpkin puree, 1/4 cup maple syrup, and ¾ teaspoon pumpkin pie spice with the water.
  • Peanut butter-banana: Stir 1/4 cup creamy peanut butter into the finished oatmeal. Top each serving with banana slices.
  • Blueberry almond/pecan: Top each serving with a handful of fresh blueberries, a scattering of toasted sliced almonds or pecans, and a drizzle of honey.
  • Savory sesame soy: Omit the salt. Stir in 2 tablespoons soy sauce and add 1/2 teaspoon toasted sesame oil with the water. Serve topped with a fried egg.

Steps:

  • Melt butter or margarine in a small frying pan over medium/medium low heat.
  • Add the oatmeal and stir so that it is evenly coated.
  • Cook until the oatmeal starts turning golden brown and a little crunchy, about 3 to 5 minutes.
  • Add the brown sugar, again stirring well to coat the oatmeal.
  • Cook 1 to 2 minutes more, until the brown sugar is completely melted and dispersed, and the oatmeal is very golden brown.
  • Serve on top of yogurt, or with a small amount of milk or cream.

Toasted Oatmeal and Brown Sugar Milkshake image

Steps:

  • FOR THE OATS:.
  • Melt the butter in a small nonstick saucepan over medium heat until it stops foaming.
  • Add the oats and cook, stirring constantly, until medium golden brown and fragrant, about 6 minutes.
  • Standing back because the mixture will spit and sputter, add ²⁄³ cup milk, the water, and salt and bring to a boil.
  • Reduce the heat to medium-low and simmer, stirring occasionally, until the oats are very soft and almost all of the liquid has been absorbed, about 18 minutes.
  • Off the heat, cool the mixture to room temperature, about 20 minutes.
  • FOR THE SHAKE:.
  • Place ½ cup (5 ounces) of the cooked oats, the remaining ½ cup (4 ounces) milk, the brown sugar, and cloves in a blender and blend until the oats are completely broken down and incorporated into the milk, about 1½ minutes.
  • Add the ice cream and pulse several times to begin breaking it up. With the blender motor off, use a flexible spatula to mash the mixture down onto the blender blades.
  • Continue pulsing, stopping and mashing until the mixture is well blended, thick, and moves easily in the blender jar, roughly 30 to 90 seconds.
  • Pour into a chilled glass or glasses, and serve at once.
