TUNA FISH AND SPICY PICKLED VEGETABLE PATE
This is so simple and delicious. Use your favorite canned tuna and jarred or deli hot pickled veggie mix. I use Bumble Bee's prime fillet solid white albacore in water (gold can) and Mezzetta Hot Veggie Mix. Great in a pinch when unexpected guests stop by. Wonderful served with my recipe #227398 when you have time to plan ahead.

- Blend tuna, mayo and veggies in a food processor until smooth.
- Serve with crackers or a baguette as an appetizer with a whole piece of one of the veggies on top or on a slice of whole grain bread for an open face sandwich.

TUNA FISH PATTIES
This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

Steps:
- Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
- Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
- Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

This is similar to classic tuna fish salad but with a kick. My boyfriend made this when we were out of relish and decided to substitute with jalapenos. It was awesome! I added the relish back in to give it a sweetness along with the spiciness.

- Place the potato into a small pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash the potato with a potato masher or fork in a large bowl.

- Melt butter over med heat in small sauce pan.
- Add flour slowly, stirring constantly until well combined (it should form a smooth paste with no balls of flour still hidden).
- Add milk slowly, stirring in between each addition till all is smooth and not curdled looking.
- Add salt and pepper.
- Lastly, add the tuna fish and bring to a low boil. If sauce is too thick for your liking, add more milk -- too thin, add more flour.
- *sauce will thicken a bit as it simmers*.
- I like to add more pepper- towards the 1/2 teaspoons mark- but add to your liking.
- Toast 6 slices of bread in toaster, immediately upon removing from toaster put a large spoonful of tuna mixture on top of toast and spread evenly over top.
- Grate desired amount of cheese on top and serve!

PASTA WITH TUNA AND OLIVES
If you want to make a complete meal of this, you can add a green vegetable to the mix (see the variation below). I like to use fusilli because I like the way the tuna gets lodged in the twists of the corkscrews, but other types of pasta, such as penne or spaghetti, will be just fine.

Steps:
- Begin heating a large pot of water for the pasta. In a large pasta bowl, break up the tuna. Heat the olive oil in a small frying pan or saucepan over medium heat and add the garlic. Cook, stirring, just until fragrant, and remove from the heat. Add to the tuna. Add the parsley or basil, and mix together.
- Add the tomato sauce to the pan, heat through and season to taste with salt and add pepper and the red pepper flakes if using. Stir in the olives.
- When the water for the pasta comes to a boil, add a generous tablespoon of salt and the pasta. Cook al dente, until firm to the bite, following the cooking instructions on the package but checking the pasta a minute or two before the indicated time. Remove 2 tablespoons of the cooking water and mix with the tuna.
- When the pasta is al dente, drain and transfer to the bowl with the tuna. Add the tomato sauce with the olives, toss everything together, and serve. Pass the Parmesan at the table.
