ULTIMATE TWICE BAKED POTATOES
I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
- Bake for another 15 minutes.

TWICE-BAKED LOADED POTATOES RECIPE BY TASTY

Steps:
- Preheat the oven to 400˚F (200˚C).
- Rub each potato with 1 teaspoon of oil, and prick the top with a fork.
- Place the potatoes on a rimmed baking sheet and bake for 1 hour.
- Transfer potatoes to a cutting board, and cut in half.
- Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a medium bowl. Reserve the skins.
- Add the sour cream, melted butter, salt, pepper, ½ of the shredded cheese, and ½ of the scallions, and combine with a hand mixer until smooth.
- Use a spoon to transfer the potato mixture back into the scooped out potato skins.
- Bake for 10 minutes.
- Sprinkle the potatoes with remaining cheese, and bake for 5 more minutes, until the cheese is melted.
- Top with sour cream, bacon, and the remaining scallions.
- Enjoy!

TWICE-BAKED POTATOES

- Preheat the oven to 400 degrees F.
- Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
- Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
- With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
- Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
- Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.
DECADENT TWICE BAKED POTATOES
-These creamy stuffed potatoes have a mild smoky flavor and are easy to make. Most of the cooking time is baking the potatoes before stuffing. I prepared everything early in the day and did the final bake at dinnertime. The listed serving size is half a potato per person. Created for RSC #15

- Scrub potatoes. Spray pan and potatoes with cooking spray and lightly sprinkle with salt if desired. Bake at 350 degrees until done (approx 40 minutes).
- Let potatoes cool enough to handle. Slice in half lengthwise. Spoon out the inside of the potatoes into a bowl; leaving a shallow amount in the shells. Place shells back into pan.
- Add cream cheese, butter, sour cream, cheddar cheese, 2 tablespoons of the milk and all spices into the bowl with the potato insides. Stir until blended & fluffy, but not overworked. Adjust with additional tablespoons of milk if needed. The result should be creamy, but still scoop able.
- Spoon into the potato shells. Cover and chill at this point if making for a later meal. They can also be frozen at this point.
- Bake at 350 degrees for 20-25 minutes or until potatoes are hot & lightly browned. If working with chilled potatoes made earlier in the day add 10-15 minutes cooking time. The potatoes can also be baked directly from frozen by adjusting the cooking time.
- Optional garnish: After removing from oven sprinkle lightly with smoked paprika & the green onion tops for color.
TWICE BAKED PARTY POTATOES
These are great to make ahead and freeze.

- 1. Rub unpeeled potatoes with oil, prick with a fork ad bake at 425 degrees until tender - about 45 mins.
- 2. While the potatoes are cooking, in a mixing bowl, mix sour cream, cream cheese, pepper, salts and butter.
- 3. Let potatoes cool enough to handle and then slice off the top 1/4 and scoop out the insides, add to the above cheese mixture and beat until just mixed.
- 4. Once mixed, scoop spoonfuls of the mashed potatoes back into the shells until filled.
- 5. Top with a little grated cheddar cheese if you like.
- 6. You can serve immediately or these keep for 2 weeks in the refrigerator or they freeze wonderfully for quick dinner add-ons later.
BRIE TWICE BAKED POTATOES
These are creamy soft and comforting! No need to salt the onion mix has sufficient amounts. This can be made the day before for easy preparation of a party, or make and freeze for future enjoyment.

- Preheat oven to 375 degrees F.
- Slice 5 of the baked potatoes lengthwise in half. Carefully scoop out the potato flesh into a medium bowl, leaving a 1/2-inch thick shell. Rice the potatoes back into the bowl. Rice the garlic the peel the other potato and rice into the bowl.
- Add butter, creams, onion mix, pepper, parsley and brie to the bowl of potatoes and stir til combined.
- Mound the potatoes into the potato shells and place on cookie sheet pan. (Potatoes may be covered and refrigerated up to 24 hours at this point. Let come to room temperature before finishing in the oven.)
- Bake 12 to 15 minutes, until cheese has melted and stuffing is heated through. Brown under the broiler until golden, if desired.
ROSE MARY'S TWICE BAKED PARTY POTATOES
This is a recipe I have been making for years, and one day decided to put a little twist on it by adding a crunchy topping to it using corn flakes like with my party potatoes, but for added flavor added French Fried onion rings like in the green bean casserole, it has all the goodness of twice baked with a festive flair from the chopped red Bell peppers. The cheese, bacon and sour cream & other ingredients really does bring it all together, and it looks stunning when you bring it to the table. Great for any occasion, not just on holidays.

- PREHEAT OVEN TO 350 DEGREES F.In a large zip lock bag, Crush corn flake crumbs with french fried onion rings & 6 tablespoons of melted butter, and set aside till needed. Microwave or bake in oven the potatoes, then carefully scoop away potato from shell leaving at least 1/4 inch along sides of potato to hold it's shape. Add remaining scooped out potato to a large bowl.
- Crumble bacon or use a food processor or blender. Mix potatoes & other ingredients together with 2 cups of the shredded cheese, including crumbled bacon, and spoon into potato shells or use a buttered casserole dish if desired. Sprinkle with additional paprika. Top with extra shredded cheese and crumb mixture then bake in preheated oven for 25 to 35 minutes till heated through.
- If you have extra potato mixture left over, add it to a buttered casserole dish and bake as directed above. You can share it with a neighbor or save for another meal.
- Once cooked, garnish tops with additional chopped red bell pepper, & chopped chive if desired.Accent with leafy greens if desired.
