VANILLA POACHED PEARS
Steps:
- Place the white wine, water, sugar and vanilla bean and pulp into a 4-quart saucepan over medium-high heat and bring to a boil.
- Core the pears from the bottom. Decrease the heat to medium low and place the pears into the liquid, cover and cook for 30 minutes or until the pears are tender but not falling apart. Maintain a gentle simmer. Remove the pears to a serving dish, standing them upright, and place in the refrigerator.
- Remove the vanilla bean from the saucepan, increase the heat to high and reduce the syrup to approximately 1 cup of liquid, approximately 20 to 25 minutes. Do not allow the syrup to turn brown. Place the syrup in a heatproof container and place in the refrigerator until cool, approximately 1 hour.
- Remove the pears from the refrigerator, spoon the sauce over the pears and serve.

PEARS GRILLED IN VANILLA WINE SYRUP
Provided by Food Network

Steps:
- Procedure for Syrup:
- Start this ahead while you are grilling other courses. Line bottom of heavy skillet to protect from soot. Add wine and sugar, slit vanilla bean open lengthwise and scrape out seeds with tip of pairing knife, adding these (and entire vanilla bean) to wine mixture. Allow mixture to boil on the grill until it becomes reduced to about 1/2 cup and has a slightly syrupy texture. Set aside until needed.
- Procedure for Pears:
- With a pairing knife, slice the bottom of each pear half into 1/2 inch thick slices (about 2/3 of the way towards stem, leaving the stem end intact.) Fan the bear slices slightly to make a flatter grilling surface. Remove vanilla bean pod from syrup. Dip each pear half in syrup, place on grill, flesh side down, and grill just until pears are lightly grill-marked. Turn pears skin-side down and continue grilling until skins are lightly grill-marked. Remove from heat and set aside. To serve add half of the remaining wine syrup and stir well to blend. Spoon a bed of the ricotta mixture on individual serving plates. Fan a grilled pear half on top of ricotta, drizzle with remaining wine syrup, sprinkle with black pepper and serve.
FLAMBEED VANILLA-POACHED PEARS WITH APRICOT SAUCE
This is a great dessert for a fancy party or a girl's night in! I love pears, and I love this recipe, because lighting the rum on fire caramelizes the sugar, and pulls out the flavor of the pears. I served this dish to a rich couple and got a hefty tip back, so I figured it must have been good!

VANILLA-SCENTED PEAR AND RASPBERRY RELISH
This relish is a remarkable union of chunky pears, whole raspberries and fragrant vanilla. The vanilla adds a deep layer of flavor, while it bridges and connects the pears and raspberries. The raspberries are added after the pears have cooked and cooled a bit so they maintain their shape, yet the warmth of the relish is just enough to extract some of their juice to give the dish a lovely rose hue. The raspberry vinegar adds a welcome note of tartness. Bosc pears are best because they hold their shape when cooked. If not available, try Forelle or Anjou, but make sure they are under-ripe. Serve with all types of pork dishes, chicken, duck, hamburgers or turkey burgers. Try it with a rich fish such as salmon or bluefish. It makes a refreshing side dish with meat or poultry sandwiches and it's delicious on yogurt. The relish keeps well for up to two weeks in the refrigerator. Found on www.dididavisfoods.com

- Halve the pears and scoop out the seeds (a melon baller works great for this). Cut off a tiny bit off the bottom of each pear so that they sit flat. Place the pears cut side up in a baking dish (I use a 9x13).
- In a small bowl stir together butter, honey and vanilla. If necessary you can heat the honey for a few seconds in the microwave to make it easier to stir.
- Spoon the honey butter over the pears. Pour apple juice into the bottom of the baking dish (there should be a thin layer of juice at the bottom, add a little more juice or water, if needed). Cover the dish with foil and bake for 20 minutes. Remove the foil and carefully spoon some of the juices from the bottom of the pan over the pears. Continue cooking, uncovered, until the pears are tender, about 10 more minutes.
