EASY ROAST DUCK

Duck is so difficult to roast badly that all experienced cooks seem to claim their procedure is the best. Having tried many methods, I can say that the results are all about the same. So I chose the one presented here, which is the easiest way to guarantee a succulent but beautifully browned bird.

Easy Roast Duck image

Steps:

  • Preheat oven to 450 degrees. Remove giblets and neck from duck cavity and discard or reserve for another use. Cut off excess fat from duck cavity.
  • Place duck, breast side down (wings up), on a rack in a roasting pan; add water to come just below the rack. Sprinkle duck with pepper and brush with a little soy sauce.
  • Roast 30 minutes, undisturbed. Prick the back all over with point of a sharp knife, then flip bird onto its back. Sprinkle with pepper and brush with soy sauce again. Add a little more water to the pan if the juices are spattering (carefully--you don't want to get water on the duck).
  • Roast 20 minutes, then prick the breast all over , and brush with soy sauce. Roast 10 minutes; brush with soy sauce. Roast 5 or 10 minutes more if necessary, or until duck is a glorious brown all over and an instant-read thermometer inserted into the thigh measures at least 155 degrees. Let rest 5 minutes before carving and serving.

  • Dress out as many coots as you can find folks (fools) who will accept an invitation for a coot dinner. i.e. allow one coot per fool or one fool per coot! Birds should be dressed out within one month of being shot. Soak birds for 2 - 3 days in salt water. (Use 2 - 3 lbs. salt per gallon of water)Rinse birds and pat dry. Place each bird on a cedar shingle which you've seasoned to taste.Place coots and shingles in a preheated oven, 450 - 500°F for eight hours. (Smoke usually clears out in 3 - 4 hrs.)Allow to cool about thirty minutes. DAD'S BASIC MOIST PORK ROAST

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

Dad's Basic Moist Pork Roast image

Steps:

  • Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
  • Preheat an oven to 475 degrees F (245 degrees C).
  • Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
  • Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
  • Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.

RICE COOKER STEEL-CUT OATS

The rice cooker isn't a one-trick pony: It's actually the secret to waking up to hot, creamy oatmeal. Steel-cut oats soften in the machine while retaining their nutty flavor and nubby chew - all without any effort on your part. Since rice cooker models vary, you can play around with the water proportions to achieve your favorite consistency. Generally, though, you'll need a lot more water to oats using a rice cooker because oats stiffen and soak up even more water as they rest after cooking. Once they're done, you can top them however you like, but regardless of whether you prefer your oats sweet or savory, be sure to cook them with salt to enhance their flavor.

Rice Cooker Steel-Cut Oats image

Steps:

  • Combine the oats and salt in a rice cooker. If using a model with a porridge setting and a cooking timer, stir in 3 1/2 cups cold water. If using a standard model, stir in 4 cups cold water.
  • If your machine has a timer setting, set it to start cooking 2 hours before you want to eat your oatmeal. If it doesn't have a timer, turn on the machine right before you go to bed. The machine should automatically go to a warming setting after it cooks the oatmeal, but check your machine to make sure.
  • Gently stir the oatmeal, then divide among bowls or airtight containers to eat on the go and add the toppings of your choice.

  • If you're not a duck hunter or married to a duck hunter, just skip this recipe. Personally, I've never tried to cook a coot, primarily because I've never even shot at an "Ivory Billed Mallard". Remember, this is the guy who will eat every thing except grits and green lima beans. In this modern age, it seems to me, too many people blame events in their childhood for the mistakes or failures they make as adults. Some rightly so, but I can't help but feel a lot of it is over done!So where is all this leading, you ask yourself? Yup! you guessed it, my childhood. Since my dad first took me duck hunting at age three, the list of things I've done in life longer than I've duck hunted is fairly short. Memories of those first duck hunts are still vivid. Back in that distant past, I learned that the preferred duck of those who wait at home while others duck hunt, to be mallards. Those of the green headed variety! My dad, being a pretty fair hand with a shotgun, seldom got skunked in those days. He'd been there before, but it was a new experience for me, just four years old. About the only thing flying in the marsh that day were coots, which Dad had several different adjectives to describe. I didn't understand why dad didn't shoot them as they patterned by. At that time I obviously thought-ducks are ducks! Wrong! How long I pestered Dad to shoot them, I can't remember. What I do remember is him saying, "Mother didn't like any kind of ducks except those with green heads" and it wouldn't be very smart to take something home she didn't like. Though I was just four years old, that part I understood! I'm sure Dad first passed this recipe on that day.
