BLACKBERRY AND APPLE CRUMBLE
An English dish, my mum's favorite and now the favorite for my family, it incorporates blackberries, apples, and a crumble topping that makes for great dessert. Serve hot or cold with English custard, fresh cream, or ice cream.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Slice apples and place in a saucepan with water and 3 tablespoons sugar. Heat over medium-low heat for 5 minutes, stirring every minute to prevent sticking. Stir in blackberries and taste, adjusting sugar if necessary. Make sure apples get thoroughly coated with blackberry juice. Cook for about 3 minutes; mixture will still be runny. Pour into a 2-quart casserole dish and allow to cool slightly.
- Meanwhile, combine flour, sugar, and butter for crumble topping in a mixing bowl. Mix with an electric mixer or your fingers until it resembles bread crumbs. Pile the crumble topping evenly over the fruit.
- Cook in the preheated oven until golden brown, 20 to 25 minutes.

- On a lightly floured surface, roll out half the dough to fit a 9-in. pie plate; trim to 1 in. beyond rim of plate. Top with a thin layer of apples. In a large bowl, combine blackberries and remaining apples; sprinkle with lemon juice. Combine sugar and cornstarch. Add to fruit mixture; toss gently to coat. Spoon into crust; dot with butter., Roll out remaining dough; make a lattice crust. Trim, seal and flute edges. Beat egg with water; brush over lattice top and pie edges., Bake at 375° for 50 minutes or until filling is bubbly and apples are tender. Cool on a wire rack. Serve warm or at room temperature.

- In a large bowl, combine flour and salt. Cut in butter until crumbly. Sprinkle with vinegar. Gradually add milk, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle. , Meanwhile, in another bowl, combine the brown sugar, flour and cinnamon. Cut in 2 tablespoons butter until crumbly; set aside. Melt the remaining butter. Cut apples into 1/2-in. rings., Shape dough into sixteen 11/2-in. balls; roll into 5-in. circles. Brush with 2 tablespoons melted butter. , Place one apple ring in the center of each circle. Top each with 2 teaspoons brown sugar mixture. Fold edges of dough over apple rings, leaving centers uncovered; crimp edges. Brush dough with remaining melted butter; sprinkle with sugar., Place 1 in. apart on ungreased baking sheets. Bake at 375° for 30-35 minutes or until golden brown and apples are tender. Serve warm.

APPLE & BLUEBERRY DANISHES

- First make the filling: melt the butter and 3 tbsp of the sugar in a medium saucepan. Stir in the apples and spices and cook for 5 mins, until the fruit is slightly softened but not cooked. Remove from the heat and stir in the blueberries.
- Roll the pastry out on a lightly floured surface to £1 coin thickness. Cut out 8 x 11cm squares. Prick the squares all over with a fork and transfer to a baking tray.
- Divide the filling between the pastry squares, spooning it into the centre of each square. Bring the four corners into the centre of each square and pinch together edges using a little of the egg to help stick. Brush all over the danishes with the rest of the egg. They can be covered and chilled for a few hours now.
- Heat oven to 220C/200C fan/gas 7. Dust with the remaining demerara and cook for 20 mins until the pastry is golden. Don't worry if they pop open while cooking - they look even prettier.

APPLE PASTIES
Steps:
- Preheat the oven to 375°F.
- Separate the egg, placing the egg yolk in a large bowl, reserving the egg white for later use. Add the sour cream, sugar, flour, salt, and cinnamon and stir until combined. Peel and core the apples and dice into 1/2-inch pieces. Add the apples to the bowl and stir until completely coated.
- Lay the piecrusts on a flat work surface and spoon one-half of the apple mixture in the center of each piecrust, avoiding the edges. Fold the dough over to form a half circle, gently roll up about 3/4 inch of the open edges and press gently to seal. Lightly beat the egg white until broken up, but not frothy and brush on the dough. Bake for 30 to 35 minutes, until golden brown. Cut each pasty in half and serve warm.
PINKY'S APPLE PASTIES
These Apple pasties are great and very few ingredients, but you will have to make plenty as I discovered because they go fast and everybody wants more. I almost regret starting them as I get plenty of demand from my family for them. I found this in an old english country side cook book, and its so easy and a hit.

- Peel and core Apples then chop into small pieces and place with butter in saucepan, add 1 and a half cups sugar then cloves.
- Heat slowly and gently with lid on so the apples and sugar dont burn or brown. Stir regularly.
- The apples should be just tender, then leave aside to cool and remove and discard cloves.
- When apple mix is cool, preheat oven to 200 degrees celsius, cut sheets of pastry into quarters, place a portion of apple mix in middle and make into pastie shapes or triangles if your in a hurry like I do.
- Place apple pasties onto sprayed baking tray.
- Brush over with egg white and sprinkle with sugar.
- Place in oven and cook until golden brown.
- Serve warm with custard or ice cream, or there even great cold as a travelling snack or for picnics.

- Cook blackberries, apple, semolina flour, cinnamon and 6 tablespoons sugar in a 2-quart heavy saucepan over moderate heat, stirring frequently, until mixture just boils and is thickened, about 5 minutes. Transfer to a shallow bowl to cool.
- Put oven racks in upper and lower thirds of oven and preheat oven to 375°F. Line baking sheets with parchment.
- Roll out half of dough 3/4 inch thick on a lightly floured surface with a lightly floured rolling pin into a 16- by 11-inch rectangle, then trim into a 15- by 10-inch rectangle, reserving scraps. Cut into 6 (5-inch) squares. Place a heaping tablespoon of fruit filling in center of 1 square. Moisten edges of square with milk and fold into a triangle, pressing edges to seal. Transfer to a lined baking sheet and press tines of a fork around edges of triangle. Make 5 more triangles in same manner, arranging them 1 inch apart on baking sheet. Repeat with remaining dough and filling, rerolling all of the scraps together once to make 12 triangles total.
- Brush triangles with milk and sprinkle with remaining 2 tablespoons sugar. Bake, switching position of pans halfway through baking, until pies are golden, about 30 minutes total. Transfer pies to racks to cool.
BLACKBERRY PUFF PASTRY TARTS
This simple yet delicious recipe is certain to please anyone with a sweet tooth. You can use either puff pastry sheets or shells for this recipe. If you use sheets, put the filling in before you cook the pastry, and then cook them all the way in one go. These are equally good warm or cooled, but I advise against reheating them in the microwave or refrigerating them.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
- Mix the cream cheese, sugar, and cinnamon together in a bowl until thoroughly blended. Set aside.
- Place the puff pastry shells on the prepared cookies sheet. Brush each shell with milk and sprinkle with turbinado sugar.
- Bake in preheated oven until shells expand and turn golden brown, 10 to 15 minutes. Watch closely to make sure shells bake thoroughly, but do not overbake. Remove shells from oven, and use a fork to remove the cap from each shell. Set the caps aside.
