CHAAT MASALA MIXED NUTS WITH CORNFLAKES

These spiced nuts with chaat masala are tangy, spicy, and the perfect thing to nibble on with drinks during the holidays.

Chaat Masala Mixed Nuts With Cornflakes image

Steps:

  • Whisk chaat masala, cayenne, and sugar in a small bowl to blend. Combine cornflakes, almonds, cashews, and pecans in a medium bowl.
  • Heat oil in a large saucepan over medium. Add cornflake mixture and toss to coat. Cook, tossing often, until fragrant and beginning to turn golden brown, about 5 minutes.
  • Transfer cornflake mixture to a rimmed baking sheet and sprinkle half of chaat masala mixture over; toss to coat. Sprinkle remaining chaat masala mixture over and toss to coat again. Let cool, then transfer to a large bowl. Do ahead: Nut mix can be made 1 week ahead. Store airtight at room temperature.

2 Tbsp. chaat masala
1 Tbsp. cayenne pepper
2 tsp. sugar
2 cups cornflakes
1 cup raw almonds
1 cup raw cashews
1 cup raw pecans
3 Tbsp. vegetable oil

Great Appetisers: Flavoured Chaat Masala Cottage Cheese Cube San image

Steps:

  • Cut the block of cottage cheese into 3 X 3cm cubes of 1 cm thickness.
  • Spread a teaspoonful of chaat masala powder on one side of the cottage cheese cube.
  • Place another cottage cheese cube over it to form a sandwich.
  • Likewise, repeat with all the cottage cheese squares.
  • Set aside.
  • Lightly beat the eggs, one at a time, in a bowl.
  • Empty the Knorr coating mix in a plate.
  • Heat oil in a wok.
  • Dip each cottage cheese cube sandwich first in the beaten eggs bowl, turn on either side to coat well in the egg mixture, and then transfer the sandwich to the Knorr coating mix plate, turn it over, and coat it well with the mix.
  • Deep fry the sandwich in hot oil on medium flame until golden brown in colour.
  • Likewise repeat for all the cottage cheese cubes.
  • Drain excess oil on clean paper kitchen napkins.
  • Transfer to a clean serving tray.
  • Serve hot as appetisers at your next party and watch'em vanish before you know it!
