Steps:

Place the cucumber, peppers, tomatoes and red onion in a large bowl.
For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.

1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
1 red bell pepper, large-diced
1 yellow bell pepper, large-diced
1 pint cherry or grape tomatoes, halved
1/2 red onion, sliced in half-rounds
1/2 pound feta cheese, 1/2-inch diced (not crumbled)
1/2 cup calamata olives, pitted
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup good red wine vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil

A simple variation on the red wine vinegar and olive oil dressing, this was inspired by the TLC program - the Take Home Chef, Episode 109 - Kaye.

Steps:

Place the red wine vinegar in a large bowl.
Slowly add the olive oil and whisk continually.
If dressing tastes too tart, whisk in water a tablespoon at a time.
Season with salt and pepper.
Once dressing is emulsified place to one side.
In a large salad bowl toss the lettuce, tomatoes, olives, cucumber and dressing.
Divide the salad between 4 plates.
Place the 4 pieces of feta on top of each salad.
Sprinkle a little chopped parsley on each piece of feta drizzle with a little more dressing and serve.

Steps:

For the Red Wine Vinaigrette: In a large jar with tight fitting lid, combine the oil, vinegar, lemon juice, mint, salt and pepper.
Cover and shake well and set aside For the salad: In a large salad bowl, toss together the romaine, lettuce mix and cabbage.
Add all the remaining ingredients and toss gently To serve the salad, shake the dressing, drizzle ove the salad and toss well Serve immediately.
