- In a bowl, mix first 10 ingredients. Place onion, green pepper and celery in a 6-qt. electric pressure cooker; place roast over top. Pour tomato mixture over roast. Lock lid; adjust to pressure-cook on high for 35 minutes. Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. , Remove roast and strain cooking juices, reserving vegetables; keep roast and vegetables warm. Skim fat from juices. Return juices to the pressure cooker. Select saute setting and adjust for low heat; bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Cook and stir until sauce is thickened, 1-2 minutes. , Serve roast and vegetables with gravy.

MANGALOREAN BEEF AND BACON GRAVY - 2.5-QT. PRESSURE COOKER

Prep time includes 1 hour for marination, although it could also marinate overnight, if you have the time. See Recipe #76581 to make your own ginger-garlic paste (it's easy!). This region's food is fairly spicy, similar to South Indian cuisine, but you can see the Portuguese influence.

- Combine meat, ginger paste and garlic paste, pepper, vinegar, and salt. Marinate 1 hour or overnight in the refrigerator.
- Heat oil in pressure cooker on medium-high heat until shimmering.
- Add cloves and cinnamon stick and stir until fragrant, about 1 minuts.
- Add the marinated beef and cook, stirring occasionally, until lightly browned, about 5 minutes.
- Add 1 cup water and close pressure cooker. Cook over high pressure for 45 minutes, then release pressure and allow steam to escape, per recommended method for your pressure cooker.
- Transfer beef and juices to a large bowl.
- Wipe out pressure cooker, add 1 1/2 tablespoons vegetable oil, and return to medium-high heat until shimmering.
- Add onions and cook, stirring occasionally, until lightly browned, about 10 minutes.
- Add green chillis and stir until fragrant, about 2 minutes.
- Add red chilli and turmeric powder and stir vigorously to prevent spices from burning, and cook for 1 minutes. If the spices tend to stick or discolor, add a few drops of water.
- Add bacon and stir until the bacon begins to render, about 5 minutes.
- Add the tomato puree and cook, stirring until the oil is fragrant and separates from the mixture, about 5 minutes.
- Add water, bring to a simmer, and cook for 10 minutes.
- Return the beef and its juices to the pot and allow the whole dish to cook for another 15 minutes.
- Season to taste with salt, if desired. Serve with naan bread or rice.

BEEF THAI RED CURRY FUSION RECIPE - 8-QT. PRESSURE COOKER
Entered for safe-keeping, adapted from pressurecookerdiaries.com. I estimate that this will fit into a 6-quart Pressure Cooker without the rice or else an 8-quart cooker with the rice. This relies on a jar of McCormick's Thai Kitchen Red Curry Paste, tailored for U.S. consumption, so it is likely milder than more authentic red curry pastes. (The Thai Kitchen fish sauce is known to be milder than Tiparos. If using Tiparos, use 1 tsp. instead of 1 Tbsp.) Note that potatoes are rarely used in Thai cuisine, so this may be more Malay or Indian than Thai.

- Prep the meat and veggies.
- Cut the meat into uniform 1-2-inch sections, trimming off any excess fat. (Bonus points for removing tendons and silver skin!). Reserve until Step 9.
- Roughly cut the bell pepper. Quarter the onions.
- In pressure cooker pan, heat olive oil on medium-high heat until shimmering. Brown the onions and peppers, until one side is slightly charred.
- Remove the vegetables and reserve until Step 13.
- Make the curry sauce: Add the cream from the top of the coconut milk, and deglaze the pan. Add the 4 oz. of Thai curry paste and mix well.
- Cook 4-6 minutes until bubbling and frying, stirring often.
- Add the rest of the coconut milk, the water, soy sauce, brown sugar, fish sauce, and basil. Mix well.
- Add the beef, and top with whole red potatoes.
- Optional: Place rice with 2 cups water in a metal bowl. Cover with a lid or tinfoil, and carefully place on top of the curry. (Make some handles by cutting aluminum foil in long strips and at least triple-layering it. Then you will be able to remove the hot bowl easily once cooking has completed.).
- Bring to pressure on high heat, then immediately reduce the heat to the lowest setting that maintains pressure and cook for 12 minutes (begin timing once pressure is reached).
- Remove from heat. Do a quick pressure release per your pressure cooker manual's recommendation.
- Remove lid and add back the bell pepper and onions. Recover and bring pressure back up for 1 minute.
- Remove from heat. Allow cooker to depressurize naturally.
- Remove the lid, directing steam away from you. Carefully remove the rice bowl.
- With all the sauce, you'll want to serve in a soup bowl. Scoop some rice into the bowl, then top with curry, meat, and veggies.

- Remove vegetables from cooker using a slotted spoon, and place on platter with roast. Cover and keep roast and vegetables warm.
- Strain cooking liquid through a cheesecloth-lined sieve into a large bowl. Discard solids.
- Bring cooking liquid to a boil over medium-high heat in a large, wide skillet. Cook until reduced to 1 1/2 cups (about 15 minutes).
- Remove 1/4 cup cooking liquid from pan. Add 2 tablespoons flour, stirring with a whisk.
- Return flour mixture to pan. Cook 2 minutes or until slightly thick, stirring with a whisk.
- Serve sauce with roast and vegetables. Garnish each serving with a fresh thyme sprig, if desired.

A 4-quart pressure cooker can handle up to 2 1/2 pounds of country-style ribs, and a 6-quart model can handle 5 pounds. Read manual for pressure cooker to double check amount of liquid needed. According to USDA, 1/2 pound of raw country-style ribs is one serving, but most people will insist on 1 pound per person. Cooking time allows for build up of steam, cooking, and natural cooling down. - Rub each piece of meat on all sides with prepared mustard. Sprinkle with (optional) salt, pepper, and paprika.
- Brown well on all sides in a pressure cooker or Dutch oven. (Use small amount butter).
- Removed browned ribs from cooker to drain for 2 minutes, and wipe cooker clean of remaining butter.
