Steps:

  • Heat a Dutch oven over medium-high heat. Add olive oil. Saute carrots, onion, potato, and bell pepper until soft, about 5 minutes. Add olives, garlic, and ginger paste and saute for 2 minutes.
  • Stir in tomatoes, cilantro, parsley, cumin, seasoned salt, sazon, paprika, turmeric, lemon juice, cayenne, black pepper, and bay leaf. Cover and cook until tomatoes have broken down and flavors have combined, about 20 minutes. Add shrimp, cover, and cook until they are bright pink, about 5 minutes.

Sunny's Quick Onion and Garlic Shrimp with Pasta image

Steps:

  • Add olive oil, lemon zest and a few grinds of black pepper to a large saute pan over medium-low heat. Cook until oil is warm and pepper is fragrant when you waft it towards you, about 4 minutes.
  • Add the onions, garlic, scallions, a pinch of chile flakes and a pinch of salt and cook, stirring occasionally to prevent them from browning, until the green of the scallions are wilted and darkened and the onion and garlic are tender, about 4 minutes. Add the tomatoes and cook, stirring, until softened, about 2 minutes. Add clam juice and lemon juice and bring to a light simmer; stir. Taste: If the tart of the tomatoes and lemon juice is too strong, add sugar in sprinkles, stirring and tasting as you go until it tastes just right. You may not use it at all or you may not use it all; it's totally optional.
  • Raise the heat to medium and nestle the shrimp into the pan. Cover and cook on one side until shrimp begins to turn opaque and curl slightly, 2 to 3 minutes. Toss and cook until shrimp just begins to turn pink on the other side, 1 to 2 more minutes. (Shrimp cooks fast and there's a thin line between done and overdone; the best rule is to remove the pan from the heat as it begins to reach the finish line.) Continue tossing and the heat of the pan will continue to cook the shrimp until done. Add pasta to a large serving bowl, then sprinkle with parsley, drizzle with olive oil, sprinkle with some more salt and pepper and top with the shrimp mixture. Serve warm during the winter or chilled during the summer.

SHRIMP WITH TOMATOES, PEPPERS AND ONIONS

Another contribution from one of my employees. I have had it on toasted rolls and it was very good. You could also serve it over rice as a main dish. Adjust the seasonings to taste. If you have kids, you can leave out the spicy pepper flakes and italian seasoning. If you like it spicy, add more!

Shrimp with Tomatoes, Peppers and Onions image

Steps:

  • 1. Dry shrimp on paper towels.
  • 2. Heat oil in large skillet and saute peppers and onions over medium heat until onions are translucent and peppers are lightly browned (about 10 minutes).
  • 3. Add tomatoes (or sauce) to pan; cook, stirring occasionally about 15 minutes or until the contents of the pan look dry and almost stick to the pan.
  • 4. Add the shrimp with the salt and pepper and seasonings; cook for about 10 minutes or until the shrimp turn pink.

1 lb medium fresh shrimp, shelled and deveined
2 Tbsp olive oil
2 medium onions, chopped
2 medium green bell peppers, seeded and chopped
3 tomatoes, fresh, cored, seeded and chopped or 1/2 c tomato sauce
1/2 tsp salt
1/8 tsp pepper, freshly gound
1/4 tsp hot red pepper flakes
1/4 tsp italian seasoning

MOROCCAN SHRIMP OVER COUSCOUS

The sweetness of the golden raisins is a nice compliment to the smokey cumin in this dish. This recipe was adapted from one I found in Real Simple magazine. It might be nice to add a little "heat" to this dish too. Some cayenne pepper or a small chili might compliment the fragrance of the cinnamon and sweet raisins. I would have liked to garnish this with cilantro, but used scallions instead!

Moroccan Shrimp over Couscous image

Steps:

  • Prepare couscous according to package directions.
  • Rinse shrimp and pat dry.
  • Season with salt and pepper to tast and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Add onion, salt and pepper.
  • Cover and cook until onion is soft, about 5-7 minutes.
  • Add cumin and cinnamon and stir to coat onions.
  • Next, add bell pepper and raisins and cook for about 4 minutes more.
  • Add tomatoes, and simmer mixture for another 3 minutes.
  • Finally, add the shrimp and cook until shrimp are pink and cooked through, about 3-4 more minutes.
  • Serve with couscous.

Steps:

  • Heat oil in a Dutch oven over medium heat. Add onion and cook, stirring, for 1 minute. Add carrots and bell peppers; cook and stir for 1 minute. Stir in garlic and 1 tablespoon harissa; mix well.
