SHRIMP STUFFED TROUT.

I like making this dish when we go camping, if we are lucky enough to catch some trout. A couple of time I've used canned baby shrimp and a jar of chopped roasted red peppers. It works pretty well, but then again, everything tastes better when you are camping.

Shrimp Stuffed Trout. image

Steps:

  • Start with shrimp stuffing; sauté onions and mushrooms in butter in skillet until lightly browned.
  • Add salt, white pepper, red peppers, green onions, shrimp and sherry.
  • Simmer over medium heat until liquid is reduced to glaze, stirring occasionally. Cool.
  • Meanwhile, dredge each trout in flour, dip in eggs, and then roll in breadcrumbs to coat lightly.
  • Carefully fill each trout cavity with Shrimp Stuffing.
  • Secure seams with wood toothpicks.
  • Melt butter in a large skillet.
  • Sauté trout in butter, few at a time, until lightly brown on both sides and until stuffing is hot.
  • Remove trout as done and keep warm.
  • Add lemon juice and zest to butter remaining in pan and heat few seconds. Season to taste with salt and pepper.
  • Pour over trout.

  • Combine 2 tablespoons butter and the lemon juice; drizzle over trout cavities. Sprinkle with pepper; set aside. , In a small skillet, saute the rice, bacon, onion, red pepper, shrimp and scallops in oil for 5 minutes or until scallops are firm and opaque. Here is a main dish that can work with many kinds of skin-on fish fillets. Seared Fish With Shiitake Mushroom Ragout image

Steps:

  • Cut fish in 4 equal portions, season with salt and pepper and brush with 2 tablespoons sesame oil. Set aside. Heat oven to 375 degrees.
  • Place a wok or large skillet on medium-high heat and add 1 tablespoon vegetable oil. Add garlic, ginger, onion and celery and stir-fry until the vegetables soften. Add mushrooms, lower heat to medium and continue to cook about 5 minutes, until mushrooms soften. Stir in the edamame and 5-spice powder. Add soy sauce, vinegar and beer and bring to a simmer. Stir in miso and let it dissolve. Remove from heat. Add salt and pepper if needed.
  • Place a heavy ovenproof skillet, preferably cast iron, over high heat. While pan heats, dust the skin of the fish with flour. Add remaining tablespoon of vegetable oil to the pan. Place fish, skin side down, in pan and sear about 5 minutes, until skin browns.
  • Turn fish over, place in oven and roast 8 to 10 minutes, depending on the thickness of the fillets, until just cooked through. An instant-read thermometer should register about 140 degrees. Remove from oven.
  • Reheat mushroom ragout. Add scallions, cilantro and remaining tablespoon of sesame oil. Spoon mixture onto a platter or four dinner plates. Top with the fish, skin side up, and serve.

Steps:

  • Preheat the oven to 425°F.
  • Heat the olive oil in a large nonreactive saucepan. Stir in the mushrooms, peppers, jalapeño, onion, and celery, if using.
  • Cook for 2 to 3 minutes over medium-high heat, stirring frequently.
  • Remove from the heat and cool for 15 minutes.
  • Season with salt and pepper to taste.
  • Stir in the crabmeat. Set the mixture aside.
  • Fan open the trout and sprinkle with the Old Bay Seasoning.
  • Loosely pack the cavities of the fish with the vegetable-and crabmeat mixture. Place in a large baking dish and bake for 12 to 15 minutes, or until cooked through. The fish will expand, displaying the stuffing.
  • Remove the trout from the pan and squeeze a lemon into the pan juices. Pour over the fish. Garnish with chopped parsley before serving.

Roasted Rainbow Trout with Rock Shrimp and Sage Butter Stuffing image

Steps:

  • Preheat the oven to 425 degrees.
  • Well in advance of cooking the fish, prepare the stuffing. Combine the sage, softened butter, lemon juice, spice and seasonings, bread crumbs, pine nuts, jalapenos, garlic and coriander in the bowl of a food processor, pulsing to combine well. Remove and place in a bowl. Keep refrigerated until ready to use.
  • Season the trout with salt and pepper and rub the trout with olive oil.
  • Divide the stuffing between the 4 fish evenly and spread an even layer inside the cavity of the fish. Divide the shrimp in the same way and add the shrimp in a layer in top of the herb butter. Close the fish to seal in the stuffing.
  • Lay the fish on an oiled rack and set in a roasting pan.
  • Place the fish in the oven and roast for 12 minutes on each side. Remove and serve immediately.

Braised Shiitakes with Shrimp Stuffing image

Steps:

  • Soak porcini in hot water in a glass measure until softened, about 30 minutes. Pour liquid through a paper towel-lined sieve into a small bowl to remove grit. Discard solids.
  • Put stuffing ingredients in a bowl and stir together in one direction with your hand until well blended.
  • Arrange shiitake caps, smooth sides down and close together, on a work surface. Put 1 teaspoon cornstarch in a fine sieve, then dust tops of mushrooms. (This will help stuffing adhere.) Stuff shiitake caps with shrimp mixture, packing gently.
  • Stir together porcini liquid, oyster and soy sauces, salt, and sugar and reserve.
  • Heat oil in a 12-inch skillet over moderately high heat until hot but not smoking. Add mushrooms, stuffing sides down, and cook until golden brown on bottom, about 2 minutes. Carefully turn mushrooms over and cook 2 minutes more.
  • Add ginger and garlic to pan (between mushrooms) and cook 1 minute. Pour in reserved sauce mixture and bring to a boil. Reduce heat and simmer, uncovered, until mushrooms are tender, about 3 minutes.
  • Transfer mushrooms to 4 small plates and keep warm. Boil sauce, stirring occasionally, until thickened, 3 to 4 minutes and spoon over mushrooms.

  • Add half of the wine and let it cook down for about 5 minutes. Add the remaining butter or oil, the bread crumbs, cheese, parsley or cilantro, and half of the lemon juice and mix it well.
  • Using a sharp knife, carefully slice the fish in half, from one side to the other, stopping with about 1/4 of an inch left to go, so that the fish will stay together. Distribute the mixture evenly inside the fish, gently pressing the fish closed around the stuffing (if it ends up getting sliced entirely in half, that is ok, just place the stuffing on top of the bottom half and place the top half on top, pressing the fish close around the sutffing).
